This slow cooker Salmon Loaf looks like meatloaf, but it tastes like one great big delicious salmon patty. If you love salmon patties (I know I DO!), you are going to love today’s Salmon Loaf recipe. This Salmon Loaf is SO SIMPLE to make. In fact, there are basically just two easy steps…
Two steps to making a great slow cooker Salmon Loaf:
1. Mix the ingredients.
2. Cook the mixture in a slow cooker.
Secret ingredient: Stuffing mix.
I got the idea to use Stove Top stuffing as one of the ingredients from a recipe I found on SparkRecipes. I’m so glad I tried it too, because the stuffing adds so much flavor to this salmon loaf. Plus, it makes it fluffy and perfect! The stuffing I used was Stove Top Savory Herbs stuffing.

The salmon I prefer to use when making salmon patties or a salmon loaf is the pouches of Chicken of the Sea boneless and skinless Pink salmon. I used 3 (5 ounce) pouches for this particular recipe. Just open the pouches and dump the contents into the mixing bowl. No need to drain liquid or check for bones. It’s the easiest way I know of to make this recipe.

I tossed some chopped red bell pepper and sliced green onion into my salmon loaf and loved it, but you can add or take away vegetables to make it suit your taste. Other vegetables that go great in a salmon loaf are chopped onion, celery, carrots, green bell pepper, yellow bell pepper, orange bell pepper, red onion, and parsley.
A quick story.
You would think that I would see my parents more often than I do, since they are just a short 20-minute drive away from us. Our visits are random, so it is always nice when it works out for them to stop over. I don’t talk much about my parents on here, but they are very supportive of everything I do. They are proud of this blog, and they LOVE my cooking, so my mom makes the recipes from my ebooks and then tells me about it a lot.

I put this salmon loaf in the slow cooker, not knowing my parents were going to swing by. When they got to my house, my dad asked what was in the slow cooker, and I told him it was a salmon loaf. His eyes lit up. I told him, “If you like salmon patties, you will love this.” Once it was cooked, I let him try some, and sure enough, he LOVED it! He kept going on and on about how great it tasted and told my mom to get the recipe. I told him I would get it on the blog…so now I am doing just that. This one is for you, Dad! Now Mom can make it anytime she likes.

While this Salmon Loaf recipe is being shared for my dad’s sake, it’s really for anyone who loves easy slow cooker meals and/or salmon patties. Does that sound like you? If it does, keep reading!
Here is what you need:
3 (5 ounce) pouches salmon
1 (6 ounce) package herb-seasoned dry stuffing mix (I used Stove Top Savory Herb)
1 cup fat-free chicken broth
1/2 cup grated Parmesan cheese
1/4 cup light mayonnaise
2 eggs
1 teaspoon lemon juice
1 red bell pepper, chopped
2-3 green onions, sliced
Cooking spray
Here is what you do:
In a large bowl, mix together all of the ingredients except for the cooking spray.
Cut 2 (foot long) pieces of aluminum foil. Fold each in half lengthwise. Place the foil strips in the bottom of the slow cooker, making an “X” that will allow you to lift the salmon loaf out of the slow cooker once it is cooked.
Trim the foil to be even with the rim of the slow cooker, if necessary, so the foil doesn’t get in the way of the slow cooker lid. Spray the slow cooker with cooking spray.
Place the salmon mixture in the foil-lined slow cooker and use the back of a spoon or spatula to push down the salmon mixture into an even salmon loaf.
Cook on LOW for 3-4 hours, or until a meat thermometer reads 160°F.
Turn the slow cooker off and let stand, uncovered, 10 minutes before lifting the salmon loaf out of the slow cooker. Using the aluminum foil, carefully lift the salmon loaf out of the slow cooker. Slice it into 8 even slices and serve.
In an effort to make the slices as close in size as possible, I cut our salmon loaf into 8 triangles, like this:
It wasn’t exact, but it was close enough. My calculations from measuring with our food scale showed that one slice should weigh close to 4.75 ounces.
Makes 8 servings.
One serving is one slice (approximately 4.75 ounces).
One serving is 5 green, 4 blue, and 4 purple points.

Did you use the seasoning packet from the stuffing mix? What size Crockpot did you use? Looking forward to trying this.

Thanks! ? The seasoning was in the stuffing, all in one package for the kind I got. I used a 6- quart slow cooker but I’m sure a 4- quart could work too. Hope you enjoy it. ?
