Chicken is seasoned with a mixture of some crushed cereal, Parmesan cheese, Mrs. Dash seasoning, salt, and a little flour, and then cooked in a butter/oil mixture. Then the chicken is served over a tomato/zoodles combo, but you can eat it alone if you are trying to keep things simple and don’t have a zucchini and can of tomatoes in your kitchen.
Salt is your friend in this recipe.
I know, too much salt is not good for you, but some recipes just need a little salt. I have included the sprinkle of salt and pepper at the end of the recipe in the nutrition facts…just trust me…it’s better this way. I really did not doctor up the zoodles/tomatoes, because you really don’t need to. Just a little salt will do the trick.

Anytime I share a recipe that uses zoodles, I feel like I should mention my method for anyone who hasn’t tried to make them before. If you are already familiar with the zucchini noodles (spiralized zucchini concept), you can skip this part and jump to the recipe here.

About the cereal.
This recipe was inspired by the cereal boxes that sit on top of my fridge. My husband used Corn Chex cereal to make Puppy Chow a couple of weeks ago and did not use the whole box, so I wanted to use it in a recipe.
If you do not have Chex cereal, you could also use some other crunchy cereal that is neutral flavored, like Rice Krispies or Corn Flakes.

Alrighty, let’s get to this recipe!
Here is what you need:
1 egg
1 cup Corn Chex cereal, Rice Krispies, or Corn Flakes cereal
2 tablespoons flour
4 teaspoons grated Parmesan cheese, divided
2 teaspoons Mrs. Dash Chicken Grilled Blend seasoning
1/2 teaspoon salt
4 (4 ounce each) boneless, skinless chicken breasts
1 tablespooon light butter
1 tablespoon extra virgin olive oil
Cooking spray
1-2 zucchinis, spiralized
1 (14.5 ounce) can basil, garlic, and oregano seasoned diced tomatoes
Salt and pepper, to taste
Here is what you do:
In a small shallow dish, whisk the egg.
Crush cereal in a zip-close bag, using the back of a spoon, rolling pin, or a meat tenderizer. Add flour, 1 tablespoon Parmesan cheese, Mrs. Dash seasoning, and salt in the bag with the crushed cereal and toss to mix.
Coat chicken with the beaten egg and then coat with the crushed cereal mixture.
In a large skillet set over medium heat, melt the butter and add the oil. Cook the chicken in the butter/oil. Spray top of the chicken with the cooking spray. Cook 6-89 minutes on both sides.
Meanwhile, in a separate skillet, add the zoodles and undrained canned tomatoes. Cook zoodles and tomatoes for 5-6 minutes; drain the sauce.
Plate 1 chicken breast over 1/3 to 1/2 cup zoodles/tomatoes…more or less, depending on how big your zucchini(s) were.
Lightly sprinkle with remaining 1 teaspoon Parmesan cheese and salt and pepper, to taste.
Makes 4 servings.
One serving is 1/3 to 1/2 zoodles and 1 crispy chicken breast.
One serving is 7 green, 5 blue, and 5 purple points.
