Chicken Parmesan Meatball Sub Sandwiches on Meal Planning Mommies.

 

I had my husband in mind when I made these. When we go to Subway, one of the subs he likes to get is the meatball sub. This recipe takes meatball subs and combines them with the flavors of a Chicken Parmesan recipe.

You will love these tasty subs that use simple ingredients like ground chicken or ground turkey, pasta sauce, Italian breadcrumbs, Parmesan cheese, and sliced provolone cheese.  They come together quickly and are super yummy.

Pick your bun, hon.

Originally I was going to use light hamburger buns with this recipe. Since we had hotdog and hamburger buns in the house at the time of me making these, I tried them both. I found that the hot dog buns were easier to pick up, so for that reason, I am recommending hot dog buns. The truth is, though, as far as taste goes and WW SP, there is not much difference, so do whatever floats your boat. Are you ready to try these simple crowd-pleasing meatball subs? Great!

Here is what you will need:

1 pound 98% lean uncooked ground chicken
2 eggs
1/4 cup Italian seasoned breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking spray
1 cup vegetable marinara sauce
8 slices reduced-fat provolone cheese
8 light hot dog buns

Here is what you do:

In a medium bowl, combine ground chicken with eggs, breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.

Shape meat mixture into 32 meatballs that are approximately 1 tablespoon each.

Spray a large skillet with cooking spray and set over medium heat. Carefully add the meatballs and cook 2 minutes, flip the meatballs, and cook an additional 2 minutes. Flip 2-3 more times, cooking 2 minutes each time to brown the outside of the meatballs. If they are still not fully cooked, cover the skillet and cook until they measure 165°F in the middle. Total cooking time will be approximately 8-10 minutes.

Mix marinara sauce in with the meatballs. Allow to cook 1-2 minutes.

Cut cheese slices in half. Over every four meatballs, place 1/2 cheese slice; cover and cook an additional 2 minutes, or until the cheese is melted.

Top each bun with 4 cheese topped meatballs and serve immediately.

Makes 8 sandwiches
One sandwich is 7 green, 6 blue, & 6 purple points.
