I’ll be honest, I have not been eating well lately. I have been busy working toward my masters degree. Some days, I am just barely getting done what absolutely needs to get done. On those days, I don’t always have it in me to whip together a healthy dinner.
Sometimes when I get to this point, I try to dream up a healthy and easy soup that I know will make me feel better. I wanted a quick, easy soup that would cook in the slow cooker and did not require a lot of effort. I wanted to smell the soup cooking while I worked on my homework as a reminder that I am doing what is good for me, and then enjoy it in the evening. That makes sense, right? There is something about having dinner in the slow cooker that just makes me feel like I am on top of things. You too?
There are just two steps to making this recipe:
1. Put the ingredients in the slow cooker.
2. Slow cook the soup.
Plus, it’s low in points on all three MyWW plans.
One generous serving is 1-1/2 cups and is just 3 Green, 3 Blue, or 2 MyWW Purple points! If you have a few extra points, you could even serve a slice of buttered bread on the side.
Making “cabbage prints”
You will only be using half of the head of cabbage for this soup. Do you have some little ones in your life who could use a new craft idea? How about making a “cabbage print” by using a “cabbage stamp?”

There is something beautiful about fruits and vegetables, isn’t there? This can be especially fun for preschool age children who are still curious about little details. Whether you have little ones around or not, this craft and this soup is for you!
Here is what you need:
1/2 head cabbage, chopped
13 ounces turkey kielbasa sausage, sliced or chopped
2 (14.5 ounce) cans diced tomatoes, undrained
2 cups fat-free beef broth
13 ounces baby potatoes, chopped into 1/2-inch chunks (approximately 2-2/3 cup chopped)
1 onion, chopped
3 garlic cloves, minced
1 tablespoon McCormick Garlic and Herb seasoning
Here is what you do:
Add all of the ingredients to the slow cooker.
Slow cook the soup for 4-6 hours on HIGH or 8 hours on LOW.
Makes 8 (1-1/2 cup) servings.
One serving is 3 Green, 3 Blue, or 2 Purple MyWW points.

Ingredients

To me it would have been helpful to have the potatoes listed in cups instead of ounces. It was easy to put together and I shared the recipe with my WW leader and she will share it with the group on Remind.

Thank you, Marlys! I just weighed, chopped, and measured the potatoes. Thirteen ounces of baby potatoes is approximately 2 and 2/3 cup chopped. Hope this helps!
