We have a great collection of recipes for you this week. This week’s meal plan has six recipes that are all between 3-9 Weight Watcher smart points per serving. Earlier this week I shared our Cheesy Italian Cauliflower Bake recipe. I was so impressed that you could substitute pasta with cauliflower and still have a filling Italian inspired meal that tastes great. In the meal plan this week we have a recipe that replaces RICE with cauliflower. It’s Cauliflower Fried Rice! This idea is great if you are gluten-free or on Weight Watchers (or both!).

The Cauliflower Fried Rice recipe comes from Iowa Girl Eats. The recipe makes 3 servings on her site so I doubled the ingredients in the meal plan and grocery list to make 6 servings. When you make this recipe you will want to double the ingredients when you make it or half the ingredients on the meal plan/grocery list. Same goes with the turkey panini recipe from Cookin Canuk. Her recipe is for 2 servings so I double the ingredients to make 4 servings.
Mother’s Day weekend.
I had a very meaningful time with my precious mother this morning (Friday, as I type this). She came over this morning before she had to go into work. She will be with my brother and his family on Mother’s Day and I wanted to see her before she left to give her the presents we had for her. I printed off the post I wrote about her the other day so she would have a copy of it. She sat at our dining room table and read it out loud to my dad, choking back tears when she was blessed. It made for a very precious moment for me and my parents and I was grateful for the opportunity to tell my mom how much I appreciate her. I hope you have a chance to tell your mother (or those in your life who are like a mother to you) how you appreciate them too. Maybe you will have an opportunity to ask questions like I did? I’m so glad I asked my mom about her childhood and let her re-tell her memories, and share new ones I had never heard before. I didn’t realize how important opening up that conversation was going to be. When we learn about people’s pasts it makes their present (and future) so much easier to understand. Just a thought.
