Do you want to eat tacos but know you should probably eat a salad instead? For all of my fellow Weight Watching taco lovers out there I have a great solution for you. You will love this hearty and healthy turkey taco salad. This recipe makes five generous servings that are just 2 Weight Watcher FreeStyle Smart Points each! You can’t beat that. The saucy meat mixture replaces salad dressing in this recipe making this a very low point meal.
Here is what you need:
1 lb. 99% fat-free ground turkey
1 medium sweet red pepper, chopped
1 medium sweet yellow pepper, chopped
1/3 c. chopped onion
2 garlic cloves, minced
1-1/2 c. salsa
2 tsp. chili powder
1 tsp. ground cumin
8 cups torn romaine
10 tortilla chips
5 tbsp. shredded cheddar cheese
Here is what you do:
In a large skillet, cook turkey, peppers, onion and garlic over medium heat about 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles.
Stir in salsa, chili powder and cumin; heat through.
Divide romaine among five bowls.
Top each salad with 1 cup of turkey mixture. Crush 2 tortilla chips over each bowl and sprinkle with 1 tablespoon cheese.
Makes 5 servings

The directions call for garlic but I don’t see it in the ingredient list. Do yo usually add garlic? If so, how much?

My apologies. I usually use 2 minced garlic cloves, but you could use as little or as much as you like. I will correct the recipe. Thanks for bringing that to my attention.
