Ravioli Primavera Soup

I don’t know what the weather is like where you are, but over here in good ole Indiana, it got down to 2°F this past weekend. You may have noticed me sharing more soup recipes lately. When the temps drop like this, I’m always inspired to heat up a big batch of soup. You too?

How would you like to add a nice warm soup to your menu this week! This Ravioli Primavera Soup is another quick and easy soup your whole family will appreciate!

What makes this soup so easy?

This simple no-fuss soup is perfect for a winter weeknight. By using “dump-and-go” ingredients like frozen vegetables, refrigerated ravioli, and packaged sliced/diced ham,  you can have this soup ready in 20 minutes or less.

About the vegetables.

California medley vegetables are a mix of broccoli, cauliflower, and carrots. You can use different fresh or frozen vegetables if you would prefer. Celery and/or bell peppers would also work in this soup. Just cook them in step one, allowing them to soften along with the onion.

Different companies chop their vegetables differently. You may notice that your bag of vegetables has unusually large broccoli, like mine did. In this case, you can just cut the bigger vegetables before adding them to the soup.

Ways to bring down the points per serving.

Here are just a couple of ideas if you are on the MyWW green, blue, or purple programs and trying to reduce the number of points:

1. Reduce the amount of ham or skip it altogether (this will also significantly cut back on sodium).

2. Reduce the amount of ravioli. (Instead of using 3 cups, just use 1-2 cups.) It’s also possible that some ravioli brands would be higher in points than others, so it may be worth scanning and checking them.

3. Swap the ravioli for bowtie pasta. (Instead of using 3 cups ravioli, use 2 cups bowtie pasta, for instance.) If you are on the purple plan, you could even swap out of the ravioli for zero point whole wheat pasta!

4. I just used normal diced ham, but it is possible that your store may carry “98% fat-free ham” that could possibly lower the points per serving.

Oh! And onion and parsley are optional.

Alright, let’s get to this recipe!

Here is what you need:

1 tablespoon Smart Balance light buttery spread
1 small onion, diced
1 garlic clove, minced
4 cups fat-free chicken broth
12 ounces frozen California medley vegetables
3 cups refrigerated or frozen mini cheese ravioli
8 ounces cubed, or diced, ham
2 tablespoons grated Parmesan cheese
2 tablespoons fresh snipped parsley, optional

Here is what you do:

Melt butter in a large stock pot set over medium heat. Add onion and garlic; cook for 1-2 minutes.

Mix in broth and vegetable medley; bring to a boil.

Reduce heat, add ravioli, ham, and Parmesan cheese to the stock pot; gently boil for 7 minutes, or until the ravioli is tender.

Sprinkle with parsley.

Makes 8 cups.
One serving is 1 cup.
One serving is 5 Green, 5 Blue, and 5 Purple points.

Ingredients

  • 1 tablespoon Smart Balance light buttery spread

  • Add ravioli, ham, and Parmesan cheese to the stock pot; gently boil for 7 minutes, or until the ravioli is tender. Sprinkle with parsley.
