Ravioli Primavera Soup
One serving is 5 Green, 5 Blue, and 5 Purple points.

Ingredients

Smart Balance light buttery spread
1
small onion,
diced
1
garlic clove,
minced

cups
fat-free chicken broth
12
ounces
frozen California medley vegetables

cups
refrigerated mini cheese ravioli
8
ounces
cubed or diced ham
2
tablespoons
grated Parmesan cheese
2
tablespoons
fresh snipped parsley,
optional
Instructions
Melt butter in a large stock pot set over medium heat. Add onion and garlic; cook for 1-2 minutes.
Mix in broth and vegetable medley; bring to a boil.
Add ravioli, ham, and Parmesan cheese to the stock pot; gently boil for 7 minutes, or until the ravioli is tender. Sprinkle with parsley.
