I hope you are okay with red meat.
I use a lot of ground turkey and chicken on here because they are low in points, or zero points, depending on which MyWW plan you are on. I still had some super lean ground beef that was given to us by a sweet friend, so that is why you are seeing two back-to-back red meat recipes. The Slow Cooker Beef Fajita Chili was a big hit, by the way. Have you tried it yet?
About the ingredients.
I am not a huge fan of artificial sweeteners, so I used regular Apricot Preserves. You could swap it out for the sugar-free kind. Another “swap” you could do is to use Dijon mustard instead of regular. That was my original plan, but I could not find the Dijon mustard in our fridge when it came time to make the recipe. The next day, I bought Dijon mustard at the store, and yesterday my husband pointed out that we now have three bottles of Dijon mustard! (Oops!) Welcome to my world. (lol)
What to eat with your mini meatloaves.
We ate ours with mashed potatoes and corn. Other sides that would go great with these are cooked asparagus; sliced, sauteed, and sprinkled with salt bell peppers with onion; or steamed broccoli sprinkled with salt. Have some other ideas? Drop us a comment at the bottom of the post.

Our friend gave us some super lean ground beef, and I wanted to use it, so this is my second ground beef recipe in a row. (Did you try the Slow Cooker Beef Fajita Chili yet? You should! It’s great!) Do you have some lean ground beef that you would like to use up too?
Here are a few of my favorite MPM recipes that use ground beef:
Alrighty, let’s get to this recipe…
Here is what you need:
1/4 cup apricot preserves
1 tablespoon light butter
1 tablespoon mustard
1 pound 96% lean ground beef
1/2 teaspoon salt
Nonstick spray
2 green onions, sliced
Here is what you do:
Preheat oven to 375°F.
In a small saucepan set over medium heat, whisk together preserves, butter, and mustard; bring to a boil and then turn off the heat.
Set aside 2 tablespoons of the apricot glaze.
In a medium bowl, mix the remaining apricot glaze mixture with the ground beef and salt.
Scoop 1/2 cup of the meat mixture and shape into a thick oval patty. Repeat with the remaining meat mixture until you have four patties.
Place patties on a baking pan sprayed with nonstick spray or lined with parchment paper (or you can use stoneware). Bake in preheated oven for 20 minutes.
Top meatloaves with the 2 tablespoons reserved apricot glaze. Place the baking pan back in the oven for 2-3 minutes.
Sprinkle meatloaves with green onion.
Makes 4 mini meatloaves.
One mini meatloaf is 6 Green, 6 Blue, and 6 Purple points.

Yes, you can. If you make the recipe as it is described you will have four mini meatloaves, so if you double the recipe it will make 8 servings. 🙂

I have been looking at your website. I am new to ww since the three plans came out. I am eager to try them. tonight I will try the meatloaf. I am thinking about trying the beef stew also this week. my kids tend to be picky, so hopefully, it won’t be a waste. thank you again for your hard work putting together this website.

I just wanted you to know that I made this and your beef stew. they were both so good. my kids are picky and I personally don’t like red meat that much. but it was good. I substituted apricot perserve for pineaplle perserve, really good. i may add extra nest time.
