Brussels Sprouts with Chicken, Bacon, and Apple

Do you want to know how to make Brussels sprouts super yummy?

Pair them with bacon, chicken, and apples! The combination of these four ingredients creates the perfect amount of sweet and salty! If you’ve never eaten Brussels sprouts because you heard they didn’t taste good when you were a kid, then you have to debunk that myth with this recipe!

One pot…one point!

This one pot wonder is just ONE Weight Watchers FreeStyle Smart Point per serving!

How to trim, slice, and chop Brussels sprouts.

Before we get to the recipe, let’s talk about how to prepare the Brussels sprouts. To be honest, you will probably spend more time chopping the Brussels sprouts than you will actually cooking this recipe. If you have never chopped Brussels sprouts before, you can follow the short list of steps with pictures below…

  1. Chop the bottom off. (This is the white flat end that holds the Brussels sprout together.)
  2. Slice the Brussels sprout lengthwise.
  3. Peel off the outer leaves of the Brussels sprout that look dirty or torn and discard them.
  4. Slice each half 2-3 times lengthwise.
  5. Turn and slice the Brussels sprout going the other direction.

That’s it! Easy, right?

How to peel, core, and chop apples.

There are lots of different ways you can peel and chop an apple. I used my corer and my spiralizer this time, and I didn’t take the peel off, but I would suggest taking the peel off, and so I am including that in the recipe.

Peel, core, and slice apples.

I usually use my Pampered Chef Apple Peeler, Corer, Slicer, but I didn’t feel like getting it out and cleaning it. (I was being lazy.) Of course, you could always just use a knife as well. Do whatever suits your fancy. This is what the Pampered Chef Apple Peeler, Corer, Slicer looks like…

Make it a side dish.

Another option would be to leave out the chicken and make this recipe a side dish to a meal.

Are you ready to make your house smell amazing and make your taste buds sing the happy song?

Here is what you need:

2 slices center-cut bacon
1 shallot, diced
1 tablespoon light butter
1 pound Brussels sprouts, trimmed, and diced
1 apple, peeled, cored, and diced
2 cups shredded cooked chicken
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Here is what you do:

In a large skillet set to medium heat, cook bacon until crisp. Transfer bacon to a plate covered with a piece of paper towel, leaving the bacon grease in the pan. Use paper towel to blot the grease off of the bacon.

Add shallots to the pan with the grease and sauté 2-3 minutes, or until tender.

Cook shallot in bacon grease.

Add butter and Brussels spouts and sauté 2-3 minutes.

Mix in apple, chicken, vinegar, salt, and pepper and cook 2-3 additional minutes to allow flavors to come together.

Crumble bacon and toss in with the rest of the ingredients.

One serving is 3/4 cup.
