Asian Chicken Burgers

Asian flavored chicken patties are placed on hamburger buns and topped with avocado, red onion, and spinach for a simple, tasty chicken burger that will fill you right up and keep you satisfied for a while.

Spinach, red onion, and avocado is optional.

I topped my chicken burger patty with spinach, red onion, and avocado, obviously, but you don’t have to. In fact, if you leave out the avocado, one burger would just be 6 green, 4 blue, and 4 purple points. Or if you have extra points and want to use the whole avocado, you can do that too. If you split the whole avocado between the 4 burgers, one burger would be 9 green, 7 blue, and 7 purple points.

About the cilantro spinach.

This might seem random to many people, but to a few, this will make sense. The other day, I shared a Chipotle Grilled Chicken with Apple Salsa recipe, and I accidentally called the cilantro spinach. I had today’s Asian Chicken Burger  recipe on my brain, because I made it that same day, and I did not catch my mistake until a few of our kind MPM readers brought it to my attention. Anyway, I apologize for that mistake. I have fixed the recipe now.

Alrighty, let’s get to this recipe!

Here is what you need:

1 pound 98% fat-free ground chicken
3 tablespoons ketchup
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon chili powder
1 teaspoon fresh ground or minced ginger
1/2 teaspoon garlic powder
Cooking spray
4 light buns
1/2 avocado, thinly sliced (optional topping)
1/2 red onion, thinly sliced (optional topping)
Spinach (optional topping)

Here is what you do:

In a medium bowl, combine the ground chicken, ketchup, soy sauce, honey, chili powder, ginger, and garlic powder.

Form chicken mixture into 4 equal sized patties, about 1/2 cup each. Spray grill pan or skillet with cooking spray and set over medium to medium-high heat. Cook chicken patties for 6-8 minutes on both sides, or until the chicken patties are fully cooked.

Place one chicken patty on top of the bottom of each bun. Top with optional toppings: avocado, red onion, and spinach.

Makes 4 burgers.
One burger is 7 Green, 6 Blue, and 6 Purple points.
