This Cheesy Sweet Potato Chicken Casserole was originally created because I bought too many sweet potatoes and did not have a plan of what to do with them. We also happened to have some chicken and beans that day, so I threw this casserole together with the ingredients we had on hand.
Actually, the first time I made this recipe, I did not think it was going to be that good so I did not take any pictures or write down the recipe. Once this casserole was made, of course, I was kicking myself because it was SO GOOD! Ultimately, it wasn’t a problem because I wanted to make it again anyway… and so that is just what I did!

Here is what you need:
2 large sweet potatoes, peeled and cut into 1-inch pieces (approximately 1-1/4 pounds total)
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 (14.5 ounce) can kidney beans, rinsed and drained
1 tablespoon extra virgin olive oil
6 garlic cloves, minced
1/2 teaspoon Mrs. Dash Southwest Chipotle seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cumin
1 cup reduced-fat shredded Colby Jack cheese
2 green onions, sliced
Here is what you do:
Preheat the oven to 400°F.
Place sweet potato pieces into a large microwave-safe bowl. Cover with water and microwave sweet potatoes for 9 minutes; drain the water.
Place sweet potatoes, chicken, beans, oil, garlic, Southwes Chipotle seasoning, salt, pepper, and cumin in a 13 x 9 inch casserole dish. Using hands or a large spoon, mix together the ingredients.
Place casserole dish in the preheated oven and cook for 20 minutes. Take casserole out of oven. Top with cheese and green onions.
Place casserole back in the oven and cook for 5 additional minutes, or until cheese is melted.
Makes 6 servings.
One serving is 1-1/3 cups.
