These cute little Chicken Parmesan bites are fun and delicious. When chicken is on a great sale I have a few simple recipes I like to make that only require a few ingredients that I almost always have on hand. This recipe is one of those recipes. The steps for these Mini Chicken Parmesan Bites are as easy as 1-2-3.
- Coat the chicken in egg white and a Parmesan breadcrumb mixture.
- Cook the chicken in a sauté pan with a little cooking spray.
- Top with sauce, cheese, and a little Italian seasoning. (Italian seasoning is optional)
By cutting the pieces small and cooking them on the stove-top, you can have this dinner on the table in 20 minutes or less.
If you cut the chicken into 16 equal size pieces you can eat four of these Chicken Parmesan Bites for 6 WW SP. I used sliced provolone because we already had in the refrigerator for our daughter’s lunches, but mozzarella cheese would work great too. You could also substitute the sliced cheese for shredded cheese if you like and have very similar results.
Here is what you need:
1 egg white
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound chicken
Cooking spray
1/3 cup spaghetti sauce
4 slices thin-sliced provolone or Mozzarella cheese
1/2 teaspoon Italian seasoning, optional
Here is what you do:
Cut chicken into 16 equal size nugget pieces.
Cut the sliced cheese into four equal pieces each, making 16 small square slices.
Put the egg white in a shallow dish. Mix the Parmesan cheese, breadcrumbs, salt and pepper in another shallow dish.
Dredge chicken pieces through the egg white and then coat each piece of chicken with the breadcrumb mixture.
Spray a sauté pan with cooking spray and cook chicken over medium heat about 4-5 minutes or until golden. Flip the chicken and cook it 4-5 additional minutes or until the chicken is thoroughly cooked.
Once chicken is cooked and slightly browned, spoon 1 teaspoon spaghetti sauce on each piece of chicken and top each with one small square of the sliced cheese.
Allow to cook until cheese melts, about 2 minutes.
Sprinkle with Italian seasoning, optional.
Serve warm.

Looks delicious! What kind of spaghetti sauce do you recommend that is low in points?

Hi Becky, I just used regular Prego sauce, because that is the kind I like and in using the WW app I used the description, “Spaghetti sauce, bottled, any type”. There is also the option of “reduced fat” spaghetti sauce on the app. If you swap out the regular sauce for reduced fat sauce it would make this 5 WW SP per serving.
