Hearty Sausage and Cabbage Soup

Hearty Sausage and Cabbage Soup that is only 2 WW FreeStyle SP per serving!

This soup is both hearty and light so you can feel satisfied without any guilt. I have been snacking on this soup the past couple of days and I just can’t get enough of it it! I hope you will love it too.

To keep things simple and to pack in lots of flavor, I used a bag of Jimmy Dean Fully Cooked Turkey Sausage Crumbles. When you are grocery shopping, you will be looking for a package that looks like this:

Stockpot Soup or Instant Pot Soup.

You can make this in your stockpot on the stove-top or in your Instant Pot. I found that the quicker and easier method was actually to cook it on the stove-top so those are the directions I am giving below. If you decide to make yours in an Instant Pot just cook the onion and garlic in oil on the saute setting on the IP. Then add remaining ingredients, set for 17 minutes on HIGH pressure. Once cooking time is done, release pressure naturally 5 minutes and then quick release the rest of the pressure.

This soup makes a lot! You will have 12 cups either way you cook it. The soup is divided into 8 (1-1/2 cup) servings that are just 2 MyWW points each no the green, blue, and purple plans, so you can eat til your heart’s content! Enjoy!!

Here is what you need:

Ingredients to make a simple and delicious Sausage and Cabbage Soup - Just 2 WW SP per serving!

2 teaspoons extra virgin olive oil
3 garlic cloves, minced
1 onion, chopped
2 (28 ounce) cans diced tomatoes, undrained
2 cups beef broth
1 small cabbage
1 (9.6 ounce) package Jimmy Dean Fully Cooked Turkey Sausage Crumbles
1 tablespoon brown sugar
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon pepper

Here is what you do:

In a large stockpot, heat oil over medium heat. Add garlic and onion and cook 2-3 minutes.

Cook garlic and onion until tender

Cut stem off of cabbage and chop into large chunks. (You should have about 8 cups of chopped cabbage)

When you cut the cabbage for the soup do not use the core, just the leaves.

Add remaining ingredients to the stockpot and cook over medium heat for 25-30 minutes, or until the cabbage leaves are as tender you like.

Mix ingredients and cook until the cabbage leaves are soft, about 25-30 minutes.

Cooking Sausage and Cabbage Soup.

Makes 8 servings.
One serving is 1-1/2 cups.
One serving is 2 Green, 2 Blue, and 2 Purple points.
