Pizza Soup

  This Pizza Soup takes all of the flavors you love in a supreme pizza (Pepperoni, sausage, bell pepper, onion, mushrooms, etc.) and packs it into a soup! Hearty, flavorful, and delicious!

What do you think of when you think of a supreme pizza?

Mushrooms, pepperoni, sausage, onion, bell pepper, bacon, cheese?

Today’s recipe takes all of the flavors you love in a supreme pizza and cooks them in a tomato/broth based soup that is topped with melted mozzarella cheese. If you are a fan of supreme pizzas you are going to LOVE this soup. By using sweet Italian turkey sausage, this soup is both hearty and flavorful.

Plus, one generous (1-2/3 cup) serving is just 4 Green, 4 Blue, or 4 Purple MyWW points!

A little bit about the ingredients.

Most of the ingredients are self-explanatory. I only wanted to make mention of two: the bacon bits and the turkey pepperoni. Bacon bits are usually in the aisle with salad dressings and turkey pepperoni is in the aisle with the “pizza stuff” at my grocery store. I used Hormel Turkey Pepperoni and Oscar Mayer Real Bacon Bits, but you can use any brand.

Here is what you need:

Cooking spray
1 red or green bell pepper, seeded and chopped
1 small onion, chopped
4 ounces mushrooms, sliced or chopped
15 turkey pepperoni slices, quartered
2 tablespoons Real Bacon Bits (Hormel or Oscar Mayer)
1 teaspoon dried oregano
1 pound sweet Italian turkey sausage, casings removed
1 (28 ounce) can diced tomatoes
2 cups fat-free beef broth
1 cup pizza sauce
6 tablespoons reduced-fat shredded mozzarella cheese

Here is what you do:

Spray large stockpot with cooking spray and set over medium heat. Mix together the bell pepper, onion, mushroom, pepperoni, bacon bits, and oregano in the stockpot and cook 2-3 minutes.

Add sausage and cook an additional 2-3 minutes, mixing occasionally, breaking up the meat as it cooks.

Add diced tomatoes, broth, and pizza sauce. Cook 7-8 minutes, stirring occasionally.

Top each 1-2/3 cup serving with 1 tablespoon shredded cheese.

Makes 6 servings.
One serving is 1-2/3 cup with 1 tablespoon cheese.
One serving is 4 Green, 4 Blue, and 4 Purple points.
