These Ham and Salsa Quesadillas give a fun little Mexican flare to the traditional ham sandwich. Spinach is mixed in with the salsa con queso for a healthy, satisfying quesadilla that I am calling the Ham Salsa-pinach (Salsa con queso, salsa, spinach) Quesadilla!
Break away from the lunch time sandwich rut.
We have been relying on sandwiches in the Hughes house this week. With just a couple of weeks left of summer break, I wanted to throw together a few more quick and healthy lunches that would get us away from our sandwich rut.
Special note to any parents of school aged kids out there: If your kids dig these quesadillas, perhaps they can be a new addition to your “cold lunch” routine when school starts back up! Ugh! I know, we don’t want to think about all of that right now…but it’s coming…and soon we will be forced to think about it.
Another recipe that uses Salsa Con Queso.
Salsa con queso is a creamy and cheesy ingredient that pairs great with tortillas. If you buy a jar of salsa con queso, chances are good it’s going to have more than 1/4 cup in the jar. Okay, I know this is off topic, but I went school supply shopping this week! In Indiana, where we live, the kids go back to school in just two weeks!! So, that means we are cramming in experiences like going to the fair and the water park, and just trying to make the most of what’s left of the summer.
Please accept my apology for the times, lately, when it has taken me a little longer to respond to messages, comments, and emails. I appreciate your patience with me as I try to balance the many hats I am currently wearing for a couple more weeks.

Here is what you need:
1 (15 ounce) package frozen chopped spinach, thawed and well drained
1/4 cup salsa con queso
1/4 cup reduced fat crumbled feta cheese
4 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps, or other 1 WW SP tortillas
4 ounces thin sliced 97% fat-free smoked deli ham (approximately 12 slices)
1 cup salsa
1/2 cup reduced-fat shredded Mexican cheese
Cooking spray
Here is what you do:
In a small bowl, combine the spinach, salsa con queso, and feta cheese.
Top 1/2 of each tortilla with 1 ounce of ham (about 3 slices), 3 tablespoons spinach mixture, 1/4 cup salsa, and 2 tablespoons cheddar cheese. Fold tortilla over.
Spray grill pan or skillet with cooking spray and set over medium heat. Carefully place the quesadillas on the pan and cook until the tortilla is lightly browned and the cheese is melted on the inside, about 2-3 minutes on both sides.
Makes 4 servings.
One serving is one quesadilla.
One quesadilla is 6 green, 6 blue, and 6 purple points.
