Turkey Parmesan Quesadillas

Turkey Parmesan Quesadillas take all the flavors or Chicken Parmesan and turns them into quesadillas. Just 4 WW FreeStyle SmartPoints per quesadilla.

These Turkey Parmesan Quesadillas conveniently pack the flavors of Chicken Parmesan into six easy grab-and-go quesadillas, making it a kid-friendly option that I think your whole family will love! At 4 WW FreeStyle Smart Points per quesadilla, this recipe is perfect for anyone on the Weight Watchers program.

If you have been following Meal Planning Mommies for a while, it will come as no surprise to you that the ingredients are simple: tortillas, ground turkey mixed with spaghetti sauce and Parmesan cheese, and a little spinach and mozzarella cheese.  The steps are also very simple: cook the turkey, mix some ingredients, stack ingredients on a tortilla, and cook until crispy and slightly browned.

About the sauce.

You can use any tomato/basil spaghetti sauce. The sauce I had in mind when I made this recipe was the Classico Tomato & Basil sauce because it is a brand my grocery store carries, but I would recommend using any brand of sauce that you already know you love.  Some other brands of spaghetti sauce I particularly love are Barilla, Rinaldi, and Prego.

About the tortillas.

I have talked a lot about my favorite tortillas lately, so I will spare you the run-down this time. If you are new to MPM, though, you can read about my experience with, and my thoughts about, WW friendly (1-2 WW SP) tortillas here.

Here is what you need:

Ingredients for Alisha's Turkey Parmesan Quesadillas on Meal Planning Mommies.

Cooking spray
1 pound 99% lean ground turkey
1 teaspoon Italian seasoning
3/4 cup tomato and basil spaghetti sauce
1/3 cup Parmesan cheese
6 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps (We have a list of more 1-2 WW SP tortillas here if you can’t find this particular brand/type of tortillas in your store, or you can buy the Olé Xtreme wraps on Amazon here.)
2 cups fresh baby spinach leaves
3/4 cup reduced fat shredded mozzarella cheese

Here is what you do:

  1. Spray a large skillet with cooking spray and set to medium heat.
  2. Cook turkey and Italian seasoning in the skillet until turkey is no longer pink, breaking up meat and mixing in seasoning as it cooks. Transfer meat to a medium bowl.

Cook the turkey in with the Italian seasoning for the Turkey Parmesan Quesadillas.

3. Mix spaghetti sauce and Parmesan cheese in with the ground turkey.

4. On one half of a tortilla, place a single layer of spinach leaves. Top with 1/2 cup turkey/sauce mixture and 2 tablespoons shredded mozzarella. Fold the tortilla over in half.

Layer spinach, turkey mixture, and cheese on a tortilla to make the Turkey Parmesan Quesadillas.

5. Spray the skillet you used to cook the ground turkey with cooking spray and carefully transfer one quesadilla at a time to the pan. Spray top of quesadilla with cooking spray. Cook quesadilla over medium heat for 60-90 seconds on both sides, or until crispy and slightly browned. Repeat steps 4 and 5 with remaining ingredients.

6. Optional step: Transfer cooked quesadilla to a cutting board. Using a pizza cutter, cut quesadillas into 3-4 triangles to make it easier to pick up and eat.

Makes 6 quesadillas.
One quesadilla is 5 Green, 4 Blue, and 4 Purple points.
