BBQ Leftover Turkey Mini Pizzas

Did you and your family cook a great, big, fat turkey on Christmas like mine did? Our turkey was HUGE this year, and we had/have a ton of leftovers, which I am grateful for, of course. I was trying to think of creative ways to eat turkey so that it didn’t taste the same each time I ate it. Are you in the same boat? Today’s BBQ “Leftover Turkey” Mini Pizzas are a perfectly delicious way to enjoy turkey in a way that does not involve stuffing and gravy.

Just 5 ingredients…or less, and 15 minutes…or less.

I kept this recipe as simple as I possibly could with just 5 ingredients: light English muffins, BBQ sauce, leftover white turkey meat, Monterey Jack cheese, and red onion. You could make it even easier by leaving out the red onion. I did not put red onion on my husband’s mini pizzas. As always, you can add and take away ingredients to make this recipe work for you and your family.

Don’t have turkey? No problem.

If you don’t have leftover turkey, you could also swap out the turkey with chicken, and these pizzas would taste great that way too.

Another idea I haven’t tried yet, but thought could work.

As I was creating this post, I was trying to think of other ways to change up this recipe, while still using leftover turkey. I wondered if using Ranch dressing instead of BBQ sauce and adding bacon bits to the pizzas would be any good…I am going to have to try that later. If one of you tries making, “Bacon Ranch Leftover Turkey Mini Pizzas” let us know how it went in the comments! I would love to know.

Great for a snack, lunch, or dinner.

Will you be eating these as a snack or as a meal? You can do either! If you are looking for a quick snack, just eat one. If you are looking for a quick and easy meal, you will probably want to eat two…or at least I did.

If you are just eating one mini pizza, one serving would be 3 green, 3 blue, or 3 purple points. If you are eating two mini pizzas as a meal, “one serving” would be 6 green, 5 blue, or 5 purple points.

Here is what you need:

4 light English muffins, halved
1/4 cup barbecue sauce
4 ounces white meat turkey, shredded
1/2 cup reduced-fat shredded Monterey Jack cheese
2 tablespoons diced red onion

Here is what you do:

Preheat the oven to 400°F.

Toast the English muffin halves in a toaster oven and place each one on a cooking sheet.

Spread 1/2 tablespoon barbecue sauce on each English muffin half.

Top each one with .5 ounces (about 2 tablespoons) turkey, 1 tablespoon cheese, and a little bit of red onion.

Bake the pizzas in the preheated oven for 2-3 minutes, or until the cheese is melted

Makes 8 mini pizzas.
1 mini pizza (as a snack) is 3 green, 3 blue, and 3 purple points.
2 mini pizzas (as a meal) is 6 green, 5 blue, and 5 purple points.

Ingredients

  • 4 light English muffins, halved
