I have a quick recipe to share with you today. It is so rainy here in the Midwest which puts me in the perfect mood for a pot of chili! I love recipes with few ingredients that can be made when I am short on time, but still offer up nutrition and comfort.
Chili.
I love chicken chili, turkey chili, black bean chili, taco chili, and bean-less chili. I have been trying to cut out high carb foods when I can, hence the bean-less chili. A few benefits to making bean-less chili is that you have no gassy tummy aches after, it’s a nice change of pace for my husband and kids who are not huge fans of beans and it is lower in carbs.
A time saving tip for you: Buy prefrozen chopped onions to keep on hand.
Did you know you could buy pre-diced and frozen onions in the veggie freezer section? My mom has been keeping frozen chopped onions in her freezer for recipes and told me that it is such a help! It saves time, dishes and teary eyes. A 12 oz bag (which equals 1 1/2 cups chopped onion or 1 large onion) was about .88 on sale at my Kroger. I only used half of the bag for the chili, but it was so easy.
I am sold! I will now keep these on hand for those nights when I just don’t have time to chop a fresh onion.(Bonus- they also have a great frozen diced combo of celery, onions and carrots which would be perfect for making my creamy cauliflower chowder a super quick recipe!)
Here is what you need for the bean-less chili recipe:
1- half package of frozen chopped onions (or 1 small diced onion)
1 can Tomato Sauce 14 oz
1 can Diced Tomatoes 28 oz
1 lb hamburger
1/2 tsp salt
1 tsp Oregano
1 TB cumin
2 TB Chili Powder
Toppings (optional)
Fritos
Cheddar Cheese
Salsa
Sour Cream
Super Easy and Quick Gluten Free Bean-less Chili:
Step 1: Brown your Hamburger in a large soup pot and then add 1/2 package of diced onions. Cook until onions are sauteed and hamburger is brown.
Step 2: Add your tomato sauce, diced tomatoes and chili seasoning mix. Bring to boil.
Step 3: Cover, turn down to low heat and let simmer while cooking for 20 minutes.
Step 4: Ladle into bowls and add toppings! Fritos are a nice gluten free option instead of crackers. Once you have tried it, you won’t go back. I try to limit myself to only a few! Top with sour cream, cheese and if you are brave.. salsa! Some people even like to add hot sauce to spice it up a bit!
This is a quick 30 minute meal. About 5 minutes to grab all your ingredients out of the pantry, another 5 to brown your hamburger/onion. Then 20 minutes to cook! So easy, yummy and filling.
This will make a thick chili, if you prefer yours with more juice you can add tomato juice. Some people also like to have a really meaty chili, if that is you just double your meat! You can also use petite diced tomatoes if you don’t like chunky tomatoes in your chili.
- 1 lb hamburger
- 1 14 oz can of tomato sauce
- 1 28 oz can of diced tomatoes
- 1 small diced onion (or 6 oz frozen chopped onion)
- 1/2 tsp salt
- 1 tsp Oregano
- 1 TB Cumin
- 2 TB Chili Powder
- Optional toppings:
- Cheddar Cheese, salsa, sour cream, fritos)
- Brown your hamburger in a soup pot. Drain grease.
- Add hamburger back to pot and add diced onion. cook until onion is translucent.
- Add your tomato sauce, diced tomatoes, salt, oregano, cumin and chili powder.
- Bring to a boil then turn down heat to low.
- Cover and cook for 20 minutes.
- Serve with toppings (sour cream, cheddar cheese, salsa, fritos)
