Easy and Delicious Cobb Salad

This Cobb Salad is SO GOOD, and it’s only 6 green, 5 blue, and 5 purple Smart Points for 2 cups!

What makes a great Cobb salad?

Lettuce, hard boiled eggs, cheese, bacon, some other kind of meat (chicken, turkey, ham, etc.), croutons, and salad dressing. This particular recipe uses chopped turkey and ham lunch meat, hard boiled eggs, shredded Colby Jack cheese, chopped tomato, bacon, croutons, and blue cheese salad dressing. It’s a perfect combination, and I can’t wait for you to try it!

Along with some blue cheese salad dressing, these are the ingredients used in today’s Cobb salad…

The Blue Cheese Salad dressing I used:

I love blue cheese salad dressing! If you are not a fan of blue cheese dressing, you can swap it out with any salad dressing you like (Ranch, Thousand Island, Caesar, etc.). The kind of dressing I used was “Ken’s light Blue Cheese salad dressing.” It’s one of my favorite dressings.

The easiest way to make hard-boiled eggs.

The absolute easiest, fool-proof way to make hard-boiled eggs is to use an Instant Pot. I have tried several different tricks over the years, but none of the other ways made perfect eggs that were super easy to peel every…single…time. I love my Instant Pot for making hard-boiled eggs.

My new Instant Pot that I received in December 2018 included an “egg” button that sets the Instant Pot to the perfect setting for hard-boiled eggs, but the one I had before that did not. Okay, let’s get to this Cobb Salad recipe…

Here is what you need:

1 head lettuce, chopped or 5 cups salad greens
3 ounces sliced turkey breast lunch meat, chopped
2 ounces sliced honey ham lunch meat, chopped
3 slices center cut bacon, cooked and crumbled
2 hard boiled eggs, sliced or chopped
1 tomato, seeded and chopped
32 fat-free croutons (approximately 1 cup)
1/4 cup shredded Colby Jack cheese
1/3 cup light blue cheese dressing

Here is what you do:

In a large bowl, gently toss all of the ingredients until well mixed.

Divide the salad into 4 bowls with 2 cups salad each.

Serve immediately.

Makes 4 servings.
One serving is 2 cups salad.
One serving is 6 green, 5 blue, and 5 purple points.
