Chipotle Grilled Chicken with Apple Salsa

Grilled chicken seasoned with Southwest Chipotle seasoning is served alongside fresh apple salsa for a dinner you will love. Have you ever had apple salsa before? If you haven’t, you need to! It’s delicious, and it goes great with the chicken in this recipe.

About the Southwest Chipotle seasoning.

I love Mrs. Dash seasoning because it can be used to add flavor to meat and vegetables without the hassle of trying to figure out which seasonings go great together. The Southwest Chipotle seasoning I used in this recipe can be found here.

Southwest Chipotle Blackened Chicken & Beans

How the points add up.

On the Green plan, one serving of this Chipotle Chicken with Apple salsa is just 3 green points!
On the Blue and Purple plans, one serving is just 2 points!

Isn’t that great!? You just have to give this recipe a try!

Here is what you need:

4 (4 ounce each) boneless, skinless chicken breasts
2 teaspoons Mrs. Dash Southwest Chipotle seasoning
Cooking spray
2 tart apples, peeled and chopped
1 jalapeño, seeded and diced
1/4 cup  salted pistachios, shelled
2 tablespoons finely chopped red onion
2 tablespoons red wine vinegar
2 tablespoons chopped cilantro
1 tablespoon fresh ginger
1 teaspoon maple syrup
1/2 teaspoon salt

Here is what you do:

Rub chicken breasts with the Mrs. Dash seasoning. Spray a grill pan or skillet with cooking spray and set over medium heat. Add chicken to pan and cook 6-8 minutes on both sides, or until the chicken is fully cooked.

In a small bowl, combine the remaining ingredients.

Serve 1 chicken breast with approximately 1/3 cup apple salsa (more or less depending on the size of the apples).


Makes 4 servings.
One serving is 3 Green, 2 Blue, and 2 Purple Points.

Ingredients

    Hey, Alisha. I love your recipes! I see spinach pictured with the other ingredients, but I don’t see it in the actual recipe. Did I miss it somewhere? How much do we need for the salsa?
