Southwest Chicken with Beans

How about a new recipe for Mexican Monday? Lots of protein and fiber in this one make this a satisfying meal and you’ll love how simple this is to put together. Do you want to know something really fantastic? With the new WW Freestyle Program, this recipe dropped from 8 Smart Points per serving to just 2 Freestyle Smart Points! Honestly, I LOVE this recipe. It’s so simple and it tastes delicious!

No fuss seasoning for lean meat.

Making this blackened chicken is super simple because Mrs. Dash did all the work for you! Mrs. Dash Southwest Chipotle Seasoning can be bought in the seasonings aisle of your store. Sprinkle a little on some lean protein and you will season it up without adding any smart points to the chicken. This is especially perfect with the new WW Freestyle program. If you have some zero point chicken on hand and some zero point seasoning you really can’t go wrong!

Even the sodium (which is often times a problem with seasoning) is a big fat “ZERO”! Zero sodium with lots of flavor. Now, that’s what I am talking about! I just love that there are several to choose from. Of course lean protein is smart, but there is only so much grilled chicken you can eat before you get tired of it. Change it up with these convenient seasonings.

About that cheese.

One of our readers noted in the comments that you can use Kraft fat-free shredded cheddar cheese and knock one serving down to just 1 WW FreeStyle Smart Point per serving! Just wanted to mention that for anyone interested in substituting out the reduced-fat Mexican cheese with fat-free cheddar. Thanks Elizabeth! 🙂

Here is what you need:

Ingredients for southwest chicken and beans

3 teaspoons Mrs. Dash Southwest Chipotle seasoning {affiliate link}
4 (4 ounce) boneless, skinless chicken breasts
1 tablespoon canola oil
1 (15 ounce) can black beans
1 cup frozen corn
1/2 cup Tostitos chunky salsa {affiliate link}
1/4 cup Reduced Fat Shredded Mexican cheese

Here is what you do:

Rub Mrs. Dash seasoning on both sides of the chicken.

Mrs. Dash Southwest Chipotle seasoning for chicken

Heat oil in a large nonstick skillet.  Cook chicken in oil over medium heat for 4-6 minutes each side, or until the juices run clear. Transfer chicken to a plate.

While chicken is cooking drain and rinse the black beans.

Add beans, corn, and salsa to the pan and cook about 3-4 minutes.

Sprinkle one tablespoon cheese on the chicken and allow it to melt. If it does not melt you can microwave the chicken with the cheese on it for 15-30 seconds. Serve 1/2 cup of the bean mixture with 4 ounces chicken.

One serving is 3 ounces cooked chicken, 1/2 cup black bean mixture and 1 tablespoon cheese.

    For a similar meal for one, use the WW frozen Santa Fe Rice and Beans and one chicken breast. Another option for this to put it on a large bed of lettuce for a chicken taco salad.

    If you use kraft fat free shredded cheese the whole mean is 0 points!!!

        I feel like a celebrity haha! I don’t use oil either i just use pam spray so that’s how I keep it at zero!

    Thanks for this great low low point recipe. My husband actually made it & he added some of the seasoning in the bean/corn/ salsa. We loved it & will definitely make it again.

      Hi Cheryl, Thanks for asking. 🙂 Yes, it’s still my website. Our family has been through a whirlwind of changes including adopting a newborn boy who is now 2 months old, buying a new house that needed a complete kitchen remodel, and dealing with the loss of some family members due to Covid. It’s been a wild year and I took a short break from the blog that turned into a much longer break than I initially intended. I should probably do a quick update post for my readers who have noticed that I fell off of the grid. I keep thinking I am going to and then between school and the baby, I never get around to it. Thanks for the reminder though, because I really do need to make it happen.
