Ingredients
2large sweet potatoes,peeled and cut into 1-inch pieces
1poundboneless,skinless chicken breasts, cut into 1-inch pieces
1(14.5 ounce) can kidney beans, rinsed and drained
1tablespoonextra virgin olive oil
6garlic cloves,minced
1/2teaspoonMrs. Dash Southwest Chipotle seasoning
1/2teaspoonsalt
1/4teaspoonblack pepper
1/4teaspooncumin
1cupreduced-fat shredded Colby Jack cheese
2green onionssliced
Instructions
Preheat the oven to 400°F.
Place sweet potato pieces into a large microwave-safe bowl. Cover with water and microwave sweet potatoes for 9 minutes; drain the water.
Place sweet potatoes, chicken, beans, oil, garlic, Southwest Chipotle seasoning, salt, pepper, and cumin in a 13 x 9 inch casserole dish. Using hands or a large spoon, mix together the ingredients.
Place casserole dish in the preheated oven and cook for 20 minutes. Take casserole out of oven. Top with cheese and green onions.
Place casserole back in the oven and cook for 5 additional minutes, or until cheese is melted.
