BBQ Mini Meatloaves

With generous portion sizes and plenty of protein, these BBQ mini meatloaves will fill you up and keep you satisfied until bedtime.  You may already know this by now, but I LOVE a recipe that requires five main ingredients or less. (If you want to make this recipe with just four ingredients you could even leave out the mushrooms.) Quick and easy is the name of the game right now. Our schedules have been absolutely packed so far this summer. Between work, birthday parties, Fam Jam at our church and open houses, I feel like the time I can pour into dinners has to be short and sweet. Besides, who wants to slave away in the kitchen when they can be outside?

BBQ Mini Meatloaves are a Quick and Easy Dinner.

I figure I am not the only one wanting to be quick in the kitchen so I have been trying to find ways to simplify recipes for myself and for our readers. I have been looking for ways to create recipes that use as few ingredients as possible, while still packing in lots of flavor. In my search for quick and easy dinners, I found the inspiration for this recipe in an old Food & Family magazine  (I love the Kraft Food & Family magazines). I changed it up a little bit from the way it was originally shared, but the concept is similar… with three of the main ingredients being meat, some stuffing and barbecue sauce.

BBQ Mini Meatloaves are a Hearty and Satisfying Dinner.

It might now sound like a summer meal, but between salads and sandwiches you may be looking for a hearty meal that will keep you full for a little while, so for those days, we have Barbecue Mini Meatloaves. Toss this into a meal plan that is light and low in smart points, and I think you will fully appreciate the heartiness of this recipe.

Side Dishes to go with BBQ Mini Meatloaves.

Are you ready to make some meatloaf?

Here is what you need:

 

1-1/2 lb. 95% lean ground beef
2 cups chicken flavored stuffing mix
1-3/4 cups water, divided
1 onion
1 pkg. (8 ounces) fresh mushroom
1/3 cup barbecue sauce
Nonstick cooking spray

Here is what you do:

Preheat oven to 375ºF.

Chop onions.

Mix meat, stuffing, 1-1/2 cup water and the onions until well blended, using hands.

Scoop one cup of the meat mixture and shape into a thick oval patty. Do this with the remainder of the meat mixture until you have six even similar sized patties.

Place patties in a baking pan coated in nonstick spray. Bake in oven 20-25 minutes, or until the meatloaves are thoroughly cooked.

Meanwhile, slice mushrooms. Spray large nonstick skillet with cooking spray and add mushrooms. Cook on medium-high heat 5 minutes. Add 1/4 cup water and barbecue sauce to the mushrooms.

Reduce heat and allow to cook 3-5 minutes.

Serve 2-1/2 tablespoons mushroom/BBQ sauce mixture on each mini meatloaf.

Makes 6 servings.
One serving is 1 meatloaf patty and 2-1/2 tablespoons mushroom/BBQ sauce.
One serving is 7 Green, 7 Blue, and 7 Purple points.

      Hi there Becky! When entering this into my WW recipe builder I just used the generic “barbecue sauce” option, but I really think they are all pretty close to the same. I don’t actually remember what brand I ended up using myself. Probably Aldi brand or something. 🙂 As far as smart points go, the best option would be Walden Farms zero point BBQ sauce that would bring this down to the 6 WW SP per serving. (uses artificial sweeteners) I talk a little bit about that sauce here: http://mealplanningmommies.com//grilled-chicken-with-homemade-bbq-sauce/ Hope this helps!

    Great and easy mini meatloves. I would cut back on the onions or saute them first before adding to patties.
