Ingredients
1-1/2pounds95% lean ground beef
2cupschicken flavored stuffing mix
1-3/4cupswater,divided
1onion
1(8 ounce) packagefresh mushrooms
1/3cupbarbecue sauce
Nonstick cooking spray
Instructions
Preheat oven to 375ºF.
Chop onions.
Mix meat, stuffing, 1-1/2 cup water and the onions until well blended, using hands. Scoop one cup of the meat mixture and shape into a thick oval patty. Do this with the remainder of the meat mixture until you have six even similar sized patties.
Place patties in a baking pan coated in nonstick spray. Bake in oven 20-25 minutes, or until the meatloaves are thoroughly cooked.
Meanwhile, slice mushrooms. Spray large nonstick skillet with cooking spray and add mushrooms. Cook on medium-high heat 5 minutes. Add 1/4 cup water and barbecue sauce to the mushrooms. Reduce heat and allow to cook 3-5 minutes.
Serve 2-1/2 tablespoons mushroom/BBQ sauce mixture on each mini meatloaf.
