Mayo Garlic & Herb Chicken

Are you all chickened out yet? I hope not, because I have a yummy way to eat chicken that I think you’ll love. There is not much to this recipe, really. You just need some chicken and a handful of ingredients. It’s super versatile too, so you can cook it in your oven, on your stove-top, or in your air fryer. Add more or less seasoning or garlic for an extra burst of added flavor. I have cooked this chicken using all three cooking methods (in the oven, air fryer, and on the stove-top) and love them each for different reasons.

Chicken in the air fryer.

The air fryer was my favorite way to make this chicken because it creates a nice browned outside that I think looks really pretty and tastes good. This is also the quickest way to cook the chicken. It cooks in about 15 minutes (more or less depending on the thickness of your chicken pieces). You can read about my experience with our air fryer here.

Chicken in the oven.

My next favorite way to make this chicken is in the oven. For really moist chicken with a softer outside, you will want to use this method of cooking. The only down-side to cooking the chicken in the oven is it takes longer to fully cook. Plan on it taking about 45 minutes to cook (at least 45 minutes… more if your chicken is thick cut).

The trick to getting this recipe perfect when you are cooking on the stove-top is to make sure you cook the chicken before you add the mayo/yogurt mixture. If you put the mayo/yogurt mix on the chicken before you start cooking the chicken, it will burn the outside and not cook the inside, which is just a big fat bummer (I tried, trust me).

For even cooking and for your health…

Regardless of how you cook your chicken, one thing you will want to make sure you do is this:

Make sure chicken is cut in similar thickness.

Cut your chicken into pieces that have relatively similar thickness. Big thick pieces with cute, little thin ones will result in overcooking some pieces of chicken and undercooking other pieces. If a piece is really thick, either cut it in half or pound it down until it is as thick as the other pieces (thinner is better than thicker cut, in my opinion, because it cooks quicker). When you think the chicken is done cooking, you can always poke a thermometer into the thickest cut piece, and if it says 165°F or more, you know that your chicken is fully cooked.

SMART POINTS INFORMATION FOR THIS RECIPE:

Makes 5 servings.
One serving is about 5 ounces of cooked chicken.
One serving is 4 Green, 1 Blue, and 1 Purple points.


Here are the ingredients you need to make this garlicky yumminess:

Ingredients for perfect Mayonnaise Garlic & Herb chicken

1/4 cup light mayonnaise
1/4 cup non-fat plain Greek yogurt
4 garlic cloves, minced
1 teaspoon onion powder
2 teaspoons Mrs. Dash Garlic & Herb seasoning
2 pounds boneless, skinless chicken breast
1/4 teaspoon salt
Cooking spray

INSTRUCTIONS FOR EACH METHOD OF COOKING:

If cooking the chicken in an air fryer:

Preheat air fryer to 380°F.

In a small bowl, mix together mayonnaise, Greek yogurt, garlic, onion powder, and Mrs. Dash Garlic & Herb seasoning.

Using a basting brush, generously coat chicken with the mayo/yogurt mixture. Sprinkle chicken with salt.

Spray air fryer basket with cooking spray. Place chicken in air fryer basket. Set the air fryer for 12-15 minutes, or until fully cooked and lightly browned, flipping the chicken half way through. (I made this in our air fryer on two separate occasions. The top picture (below) shows the chicken after cooking 12 minutes. The bottom is what it looked like after cooking 15 minutes and adding a little extra mayo/yogurt mixture halfway through.)

Ingredients

Spray cooking sheet with cooking spray. Place chicken on the cooking sheet. Bake in the oven 45-50 minutes, or until fully cooked and lightly browned, flipping the chicken half way through.

If cooking the chicken on the stove top:

Heat a skillet to medium heat. Spray skillet with cooking spray. Cook chicken, covered, for 10 minutes on both sides, or until fully cooked (allow for more cooking time if the chicken is thick cut).

In a small bowl, mix together mayonnaise, Greek yogurt, garlic, onion powder, and Mrs. Dash Garlic & Herb seasoning.

Using a basting brush, generously coat chicken with the mayo/yogurt mixture. Sprinkle chicken with salt.

Allow to cook 2 minutes more. Flip chicken and allow to cook 2 more minutes until the outside of the chicken is nice and golden brown.

  • In a small bowl, mix together mayonnaise, Greek yogurt, garlic, onion powder, and Mrs. Dash Garlic & Herb seasoning.
  • Using a basting brush, generously coat chicken with the mayo/yogurt mixture.
  • Allow to cook 2 minutes more. Flip chicken and allow to cook 2 more minutes until the chicken is fully cooked and the top is nice and golden brown.

    Does the chicken come out moist from the air fryer? I noticed that you mention the over version as being moist, but only mention the crispness in the air fryer. I can’t eat dry chicken and I don’t want to waste money on a cooking method I won’t eat. Thank you so much. I’m going to prepare this over the weekend….just wanted to know which method will produce the best version. Thank you!

      Hi Kristine, I was pleased with the way the chicken turned out in the air fryer doing it at the time and the temperature suggested in this recipe, but it is possible to overcook chicken in an air fryer which will result in dry chicken. If you are wanting to be certain the chicken will turn out moist, and you have the time, I would definitely suggest using the oven. Just make sure that the thickest part of the chicken is fully cooked and if it isn’t pop it back in the oven a little longer. Hope this helps!

    This was absolutely delicious. We loved it in the air fryer. I liked the mayonnaise mixture so much that I mixed some up the other day and used it on my fish in the air fryer. I was delicious. I think the sauce is very versatile and you could add many different spices and flavorings to it. I had some non-fat Greek yogurt that had a dry ranch dressing mixed in with it to make a veggie dip in the fridge, so I used that for the Greek yogurt. It turned out great! I’m going to keep some of this in fridge in a covered bowl to baste chicken or fish for a quick lunch. Thanks for the recipe!
