This is a real simple sandwich you could make on your lunch break if you wanted to. Just spread on a little cream cheese, top with some blue cheese and roast beef deli meat, toast/grill the sandwich and you’re good to go. I grilled my sandwich on a sauté pan, but you could just as easily leave out the cooking spray and toast the bread in a toaster oven. Just toast the bread as a first step instead of a last step. Because it is so simple I really don’t have much extra to say about this recipe, except that my husband liked it.
5 ingredients, less than 10 minutes.
All you need is five no-fuss ingredients, one of them being cooking spray. The part that takes the longest is the grilling of the sandwich, so you can literally have the sandwich put together in less than ten minutes.
What to do with that extra blue cheese.
You’re probably going to have some extra blue cheese. If you are looking for a way to use up some of the extra blue cheese you might want to try our Blue Cheese Chicken Burgers or our Blue Cheese Stuffed Teriyaki Burgers. They both taste fantastic.
Here is what you need:
2 tablespoons (1 ounce) low-fat cream cheese, softened
8 ounces thinly sliced deli roast beef
1/4 cup reduced-fat crumbled blue cheese
8 slices Healthy Life Sourdough bread
Cooking spray
Here is what you do:
Spread 1/2 tablespoon cream cheese on 4 slices of the bread.
Top each with 2 ounces roast beef and 1 tablespoon blue cheese.
Top each with the other 4 slices of bread.
Spray a sauté pan with cooking spray and grill sandwich for 4-5 minutes, or until the bottom slice is slightly browned.
Spray top slice with cooking spray. Flip sandwich and cook an additional 4-5 minutes or until golden brown.
Makes 4 sandwiches.
