Sunday: Reuben Sandwiches

Serves Four

My husband and I LOVE reubens!!! My mouth starts watering everytime I even look at these pictures. 😉 Our son; however, has not quite developed a taste for such things as sauerkraut. He picks up one slice of bread by itself, leaving the rest of the sandwich on his plate, and eats it plain. (toast) Here’s the recipe, for those of you who have never tried to make them.

Ingredients:
8 slices of Rye bread
Thousand Island salad dressing
4 slices of Corned beef
4 slices of swiss cheese
spreadable butter
1/2 can of sauerkraut, rinsed and drained well

Directions:
Spread butter on one side of two slices of bread. Put on slice, butter side down onto the skillet and add 1 slice of corned beef, 1 slice of swiss cheese, and a scoop of sauerkraut spread over the cheese. Pour about 1-2 Tbs. of Thousand Island dressing over the sauerkraut. Top with other bread slice. Cook at medium heat until the bottom sliced is browned. Flip and cook other side.
Repeat with remaining ingredients to make 4 sandwiches.
