Okay, I have a recipe for my adventurous friends out there…or for anyone who appreciates a yummy 5 ingredient dinner. Sweet and salty are combined in this quick and easy dinner. The sweetness of raspberry preserves with a creamy spreadable cheese is combined with the saltiness of the bacon and cooked on a chicken breast. It’s the perfect combo really!
I almost did not share this recipe.
The chicken looks purple from the raspberry preserves, and I didn’t know what everyone would think of that. But then it tasted so good, and I knew I just had to share it. If you can get past the fact that raspberry preserves on chicken makes the chicken purple, then I really think you will enjoy this recipe.
How the points add up.
If you make the recipe as it is suggested, one serving is 6 green, 4 blue, and 4 purple points.
I just used regular Smuckers Raspberry Preserves, but if you swap out the raspberry preserves for sugar-free raspberry preserves, one serving is just 3 WW FreeStyle Smart Points.
A hassle-free chicken dinner.
Jams, jellys, and preserves go great with cream cheese and/or spreadable cheese, and bacon goes great with everything, and for whatever reason the thought occurred to me to combine them together with some chicken. I kind of just threw this one together, taking a chance, because I wanted to come up with another quick and easy chicken recipe that can be made without thinking hard and without much hassle.

Here is what you need:
4 (4 ounce each) boneless, skinless chicken breasts
Cooking spray
3 White Cheddar Flavored Laughing Cow cheese wedges
2 tablespoons raspberry preserves
1 tablespoon water
8 slices Oscar Mayer fully cooked bacon
Here is what you do:
Preheat oven to 400°F. If cuts of chicken are thick, pound them down until they are thin. Place chicken pieces in a baking dish sprayed with cooking spray.
In a small bowl, combine cheese wedges, preserves, and water.
Spread 1 tablespoon on each piece of chicken.
Top each piece of chicken with 2 slices of bacon.
Bake for 22-26 minutes, or until the chicken and bacon are fully cooked.
Makes 4 servings.
One serving is 1 chicken breast with toppings.

I love this recipe, but when I put it into the recipe builder I get 6 points, not 4 (I’m on blue). I’m wondering how you got 4?

Hmm… I am not sure why we have different numbers. It might be the kind of bacon or preserves you entered into the app? Did you use the specific ones suggested in the recipe? In my app it shows one serving is 6 on the green plan and 4 on the blue plan.
