Breakfast Hash Skillet with toast and applesauce

This is a fantastic meal. It is very hearty, healthy, fast and easy! My friend, Jenn gave me the idea for this recipe and I love it!

Enjoy!

Here is what you need:


1 tsp onion salt (not pictured)
2 baked potatoes
1/2 green pepper
1 med. tomato
2 cups (uncooked) spinach leaves
2 cooked sausage patties (or whatever meat)
sea salt (or regular)
7 eggs
cheddar cheese (feta would be awesome too!)

Serve with toast and baked apples or applesauce

Step 1:

Wash, Clean and bake 2 potatoes in the microwave.

Step 2:
Chop your sausage (cooked), green pepper, tomatoes and spinach

Step 3:
Once your baked potato is cooked, dice it up and brown in your skillet

Step 4:
Add your veggies, sausage and brown

Step 5:

Add your spinach to the top

Step 6:
Put the lid on your pan to steam the spinach for a few minutes or until tender

Step 7:
Mix it all together and add 1 tsp onion salt

Step 8:
Get your eggs scrambled and ready to go!

Step 9:

Pour the scrambled eggs over your veggies/potatoes. Let sit for a few minutes, then begin to scramble.

Step 10:

Top with cheddar cheese, let melt.

Serve with Toast and applesauce! Enjoy!

    Sarah~ just swap out the cheese for cheese that is made without any additional colorings/preservatives and make your own soaked grain bread and you have a wonderful whole foods meal! Happy for you and so happy to have a pal to go on this journey with. Can I come to your house for breakfast….looks good!!!

    I made this last night, Katie, and we liked it a lot. I made a few slight changes…no meat; no tomatoes; garlic scapes (love them! Thanks!) and green onion instead of onion salt; swiss chard instead of spinach. I baked the potatoes in the oven since I don’t use a microwave and was using the oven for muffins. I sauteed the onion and other veggies before adding the diced baked potatoes. Delicious!!
