Copycat Taco Bell Bean Burritos

These copycat Taco Bell bean burritos taste just like the real thing and are just 3 WW FreeStyle SmartPoints per burrito!

Have you ever had a bean burrito at Taco Bell? Refried beans are mixed with some taco sauce and wrapped in a tortilla, along with some extra sauce, onion, and a little cheese. It’s so simple, so I decided to make a “copycat” recipe for you today. You just need six ingredients and a little cooking spray, and one bean burrito is just 5 Green, 3 Blue, or 3 Purple MyWW Smart Points!

How the points compare.

Bean burritos from Taco Bell are super cheap, so why mess with making them from home? Mostly, because you get to control the kinds of ingredients you use. One bean burrito from Taco Bell is 11 Green, 8 Blue, or 8  Purple MyWW SP, and one made according to the recipe below is just 5 Green, 3 Blue, or 3 Purple MyWW SP. Plus, I actually think these taste a little bit better.

Fiber, fiber, and more fiber.

High in fiber bean burritos on Meal Planning Mommies

Sometimes I throw a recipe on Meal Planning Mommies that is chock full of fiber. Pretty much anything with beans is going to be high in fiber, but the tortillas used in this recipe are also high in fiber, so it’s doubled up.

Makes 8 burritos.

You’re going to love how simple it is to make these. The recipe does make a lot though. If you want to halve the recipe, you can. Just use these amounts instead to make 4 burritos:

Cooking spray
1/2 onion, chopped
1 (16 ounce) can fat-free refried beans
6 tablespoons red taco sauce, divided
1/2 tablespoon chili powder
4 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps, or other 1 WW SP tortillas
1/2 cup reduced fat shredded Monterey Jack cheese, divided

Alrighty, let’s get to this recipe…

Here is what you need:

Simple ingredients to make delicious copycat Taco Bell bean burritos

Cooking spray
1 onion, chopped, divided
2 (16 ounce) cans fat-free refried beans
3/4 cup red taco sauce, divided
1 tablespoon chili powder
8 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps, or other 1 WW SP tortillas
1 cup reduced fat shredded Monterey Jack cheese, divided

Here is what you do:

Spray a large nonstick pan with cooking spray and place over medium heat. Set aside 1/2 cup of the chopped onion. Cook the remaining onion in the preheated pan for approximately 2 minutes, or until just softened.

Add the refried beans, 1/4 cup of the taco sauce, and chili powder to the pan with the onion. Mix and cook for 4-5 minutes, or until warmed and smooth.

Spoon 1/2 cup bean mixture on the middle of a tortilla. Pour 1 tablespoon taco sauce over the top of the beans, and top with 2 tablespoons shredded cheese and 1 tablespoon diced onion. Roll up the bean burrito and serve warm.

Repeat with the remaining ingredients.

    What brand and where do u buy your reduced cheese at? I have been using Kraft ff cheddar cheese but it is 4.50 for a small package jumped up in price dramatically

      Walmart has a fat free cheddar in their great value brand and it’s $1.88 a bag where I live in SC. It’s been a great find!!

    What do you serve as a side with these? I typically go for rice but I’m looking for a healthier option and can’t come up with anything.

    My daughter LOVES Taco Bell bean burritos but she gets beans only.. no red sauce, onions, or cheese. Any advice on how to get my beans up to par with TB?
