Who or what currently inspires you at this point in your life?

Back in college I fell in love with the wisdom and character of Mother Teresa. I loved her heart and her commitment to doing the work that God set before her. When she served the down-and-out, the heart-broken, and the poor and weak she did it with love and respect. She fed their soul while feeding their stomachs. All of these things still impress and inspire me today.

Soul Food.

Sarah and I decided to start sharing what we are calling, “Soul Food” on Meal Planning Mommies. After all, (wo)man cannot live on bread alone and sometimes our souls are starving while our tummies are full. We hope these little tidbits along the way will encourage and refresh your soul.

Life is. . . A poem by Mother Teresa.

A couple of years ago I found this poem by Mother Teresa and it inspired me. As I reflected on the words of the poem I was inspired and empowered to handle what life threw at me that day. It strengthened my spirit and calmed my soul. Check out this inspirational poem by Mother Teresa and see if it doesn’t put a little pep in your step today:

Life is.

“Life is an opportunity, benefit from it.
Life is beauty, admire it.
Life is a dream, realize it.
Life is a challenge, meet it.
Life is a duty, complete it.
Life is a game, play it.

    Finally! The Aldi’s grocery store now sells gluten-free French-fried Onions in their LiveGFree brand so it’s possible to make a gluten-free green bean casserole if you use a gluten-free mushroom soup such as the Pacific Foods brand! I haven’t figured up what the Weight Watchers points would be for it yet though. I’ll have to try this out in time for Thanksgiving!

      Sue, I love that Aldi’s now has gluten free french fried onions! I was so excited to see them show up again this year in stores! I also do use the Pacific Foods brand cream of mushroom soup for a green bean casserole. It is so easy and tastes amazing! Happy Thanksgiving!
