Hash Brown Topped Steak

Mmmm… Steak and cheesy potatoes! As soon as your melt the butter and add the onion you will be glad you chose to make this quick and easy steak dinner. It smells amazing and tastes every bit as good as it smells. The onion, hash browns, cheese and steak all go together so well!

This dinner idea is inspired by a Taste of Home recipe. I found this recipe idea of hash browns served on steak in a Taste of Home cookbook a while back. I would tell you which one, except that I copied this recipe from the cookbook and don’t remember now which one it was. I have found some of my most favorite recipes from Taste of Home cookbooks. Come to think of it, I don’t think I have ever tried a Taste of Home recipe that wasn’t delicious.

Hope you love this steak dinner!

Here is what you need:

  • 1 tablespoon butter
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2-1/2 cups frozen shredded hash brown potatoes, thawed
  • 3/4 teaspoon salt, divided
  • 1 cup (4 ounces) reduced fat shredded Swiss cheese
  • Cooking spray
  • 1-1/2 pounds lean trimmed sirloin beef, cut into 6 equal pieces
  • 1/2 teaspoon pepper
  • 1 green onion, sliced (optional)

What you do:

In a large skillet, heat butter over medium-high heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 2 minutes longer.

Stir in hash browns and 1/4 tsp. salt; spread in an even layer. Reduce heat to medium; cook 5 minutes. Turn hash browns over; cook, covered 5-6 minutes longer or until heated through and bottom is lightly browned.

Sprinkle with cheese; cover and remove from heat. Keep warm.

Cut beef into 6 equal pieces (mine aren’t equal, I know) and sprinkle beef with pepper and remaining salt. Grill, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness.

Remove steaks from heat; top each with 1/6 of the hash brown mixture.

Okay, so this is a little something I came up when I was trying to think of foods for Valentine’s Day. (It’s a little ways away still, but I am a blogger so, ya know. . .)  I put two steaks (one small and one a little larger) and I topped the steak with the hash brown mixture in the shape of a heart for my husband. This could be a fun (and delicious) idea if your sweetie is a steak and potato lover.

Another option is to top the steak with some chives.

And of course, it’s steak, so A-1 sauce is always an option.

Makes 6 servings. One serving is one quarter pound of meat and 1/6 of the cheesy hashbrown mixture.
One serving is 6 Green, 6 Blue, and 4 Purple points.
