Let’s just peel back all of the layers of this pizza for a second and talk about the ingredients you can’t see. Hiding underneath all of that beautiful arugula, honey ham, and sliced pears is a creamy mixture made of light cream cheese, goat cheese, and apricot preserves!
OH MY GOODNESS, PEOPLE! It’s so good! And so NOT like anything I have shared on this blog yet. And both of those things are making proud. I took one bite of this yumminess, and I just could not wait to get it on here!
Thin crust.
I am calling these “thin crust pizzas.” The “thin crust” on these pizzas is actually a WW friendly tortilla that has been sprayed with cooking spray and cooked in a skillet until it is crispy. By doing this little step at the beginning, the pizza itself only has to go in the oven for 5 minutes, speeding this little recipe along, making it perfect for a busy night. It’s a fancy pizza that can be put together in a snap!
About the tortillas.
If you have been coming to Meal Planning Mommies for a while now, you already know that I always recommend the same flour tortillas, the ones my daughter is showcasing above: Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps. If your store does not carry them, you can get them on Amazon here (they freeze and thaw well, so don’t worry about buying too many). Sweetening things up!
These pizzas are made sweet with apricot preserves, honey ham, and pear slices. It’s a shame I didn’t know about this pleasantly sweet combo until now, but better late than never, I suppose. I got my honey ham from the deli in my grocery store. I just asked for “shaved honey ham,” which is a very thin-sliced ham.
What if you use sugar free apricot preserves?
Personally, I’m not a fan of artificial sweeteners, so I tend not to use them in my recipes on here. It’s just a preference thing. If you don’t mind artificial sweeteners, though, you can use sugar free apricot preserves. If using the sugar free apricot preserves, one personal pizza would be just 5 WW FreeStyle Smart Points!
Okay, enough talk. You can’t really KNOW how good these pizzas are until you try them, so let’s get to it…
Here is what you need:
4 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps, or other 1 WW SP tortillas
Cooking spray
1/3 cup reduced fat crumbled goat cheese
1 ounce light cream cheese
2 tablespoons apricot preserves
4 ounces shaved deli honey ham
1 pear, peeled, cored and sliced
2 cups arugula
2 green onions, sliced
Here is what you do:
Preheat oven to 350°F.
Place a tortilla, sprayed with cooking spray, on a large skillet set over medium heat. Cook the tortilla 2-3 minutes on both sides, or until lightly browned and crispy. Repeat with remaining tortillas.
Meanwhile, in a small bowl, mix together the goat cheese, cream cheese, and apricot preserves.
Spread 2 tablespoons of the goat cheese mixture on each tortilla.
Top with 1 ounce ham, 1/4 of the pear slices, 1/2 cup arugula, and sliced green onions.
Transfer pizzas to a baking sheet and bake them for 5 minutes.
Carefully transfer baked pizzas to a large cutting board and slice each one into 4 slices to make them easier to eat.
Makes 4 personal pizzas.
One pizza is 6 Green, 6 Blue, and 6 Purple points.
Ham, Pear and Goat Cheese Thin Crust Pizza
Ingredients

I did this on the spur of the moment. Had to use an apple since I didn’t have a pear or arugula. Skipped the greens. We LOVED it! I can’t wait to try it with the pear and arugula. Thank you so much!
