Double Decker Mexican Pizzas on Meal Planning Mommies - Just 7 WW FreeStyle SP per pizza!

Question: Are you a fan of Taco Bell?

I am guessing that if you have eaten their Mexican Pizzas before then your answer is YES! They are so good! Ingredients associated with Mexican food (Refried beans, ground meat, enchilada sauce, tomatoes, cheese, etc.) are layered between, and on top of, two crispy tortillas for this recipe.

I did not skimp on cheese with these Double Decker Mexican Pizzas because the melted cheese on top is my favorite part of the whole thing…well, that and the tortillas that are pan fried until they have a crispy crunch to them.

1 WW SP Tortillas.

In this recipe, I recommend using tortillas that are 1 WW SP each. My favorite kind of tortillas are Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps. If your store does not carry that kind, I have a list of other low point tortillas here that might be helpful to you.

How the Smart Points stacked up on the FreeStyle program.

According to the WW app, one Mexican Pizza at Taco Bell is 15 WW FreeStyle SP. According to the WW recipe builder, one Mexican Pizza, made according to the Meal Planning Mommies recipe below, is 7 WW FreeStyle SP. Plus, this recipe is packed with extra seasoned ground turkey, so one pizza is very filling. We found that eating one half of a pizza was enough to be satisfied, which would be just 4 WW FreeStyle SP per serving! (6 green, 4 blue, and 4 purple on the MyWW program)

Are you ready to give these Double Decker Mexican Pizzas a try?

Here is what you need:

Cooking spray
8 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps or other 1 WW SP tortillas
1 pound 99% fat-free ground turkey
1 (16 ounce) can fat-free refried beans
1 (10 ounce) can mild red enchilada sauce, divided
1/2 cup water
2 teaspoons taco seasoning mix
1 (14.5 ounce) can diced tomatoes, drained
1-1/3 cups reduced-fat shredded Colby Jack cheese
1 green onion, sliced, optional

Here is what you do:

Preheat oven to 350°F.

Heat large skillet over medium heat. Spray with cooking spray and carefully lay a tortilla in the skillet. Spray top of tortilla with cooking spray. Allow to cook 2 minutes, or until the tortilla becomes slightly browned. Flip the tortilla and cook an additional 2 minutes. Set the crispy tortilla on a plate and repeat with the remaining tortillas.

Spray tortillas with cooking spray and cook on the stove top until they are crispy.

Meanwhile, spray a separate skillet with cooking spray and add ground turkey. Cook turkey, breaking up the meat as it cooks, until it is fully cooked, about 6-7 minutes.

Add beans, 1/3 cup enchilada sauce, water, and taco seasoning. Combine ingredients and cook 2 minutes, or until the beans are warm.

In a small bowl, mix together the drained tomatoes and the remaining enchilada sauce.

On a baking sheet, place one crispy tortilla. Scoop 1 cup of the turkey/bean mixture onto the tortilla and spread over the tortilla. Top with another tortilla. Spread 1/2 cup of the enchilada sauce/tomato mixture over the second tortilla. Top with 1/3 cup cheese and some green onion. Bake 2-3 minutes, or until the cheese is melted. Repeat with the remaining ingredients, making 4 Mexican pizzas total.

How to make perfect Mexican Pizzas like the ones you get at Taco Bell.

One at a time, transfer the Mexican pizzas to a cutting board. Using a pizza cutter, cut the Mexican pizzas in half or fourths to make them easier to eat.

If making 8 servings, one serving is 1/2 of a pizza. If making 4 servings, one serving is 1 whole pizza.

    Hey Alisha. I really enjoy your website and trying new recipes. I also try to keep up with how many calories I have each day. Would it be possible to show the nutritional value with your recipes. It really helps a lot. I see that most of your recipes do have the nutritional information but some don’t. Thanks for all the help you give so many people. Keep up the good work. God Bless

      Yes, I was feeling conflicted with this one. I felt like 1/2 of a pizza was enough for one serving, but I thought some people would think that one serving should be one pizza. I am still kind of conflicted with what was best for this recipe, so I just gave the WW SP for both and did not add the nutrition facts. I know this is inconsistent with what you are used to on Meal Planning Mommies. I decided to add the nutrition facts for one whole pizza, thinking people can divide the numbers in the nutrition facts by two if they wanted. Thanks.

      Update: The more I thought about this recipe, the more I couldn’t help but want to encourage the thought that one serving should probably be 1/2 of a pizza. For that reason I updated the nutrition facts to one serving being 1/2 of a pizza. Sorry if this has been confusing. I will be putting this recipe in the next meal plan, and I will be recommending that one person eat 1/2 of a pizza in the meal plan, so I wanted the nutrition facts to be consistent with that. Thanks for understanding.

    Thank u So much for this Awesome recipe! The Taco Bell Mexican pizza has always been one of my favorites but I’ve always tried to stay away from it because it’s so bad for you LOL . I think this recipe taste better than the actual Taco Bell pizza! ??

    My husband and I thoroughly enjoyed the pizza, thanks for the recipe. I do have one question – you list 1 1/3 cup cheese in the ingredients, but each of the 4 pizzas is topped with 1/2 cup? I used half reduced fat and half fat free cheese to adjust my points. Thanks again for a keeper recipe.
