These meatball sandwiches are a meat-lover’s dream. Light buns are filled with very generous sized meatballs made of ground turkey, ground beef, bacon, cheddar cheese, and more. Mmmm…YUM!
Eat the meatballs plain or on a bun.
I decided to make this a meatball sub recipe, after finding inspiration from a recipe in a Taste of Home cookbook. Once I was eating my sub, though, I realized that the meatballs actually tasted really good on their own, dipped in some ketchup! If you are feeding kids, you may try serving the meatballs with no bun, a fork, and a little ketchup.

Speaking of ketchup…what do you typically like to put on your cheeseburger? Ketchup, mustard, mayonnaise, barbecue sauce, onion, tomato, lettuce? Whatever ingredients you would normally put on a cheeseburger are the same ones that you will love to top your meatball sub with.

This recipe makes eight satisfying servings. You may be saying, “But Alisha, I don’t want to eat big, delicious meatballs all week long.” That’s okay, I totally get it, and I have good news…meatballs freeze and reheat really well! Yay!
What are WW friendly “light” hot dog buns?
In this recipe I used Healthy Life Wheat 80 Calorie light hot dog buns. If you are not familiar with “light buns”, you can refer to my list of low point bread and buns here.

Alrighty, let’s get to this recipe…
Here is what you need:
Cooking spray
2 strips bacon
1 pound 99% lean ground turkey
1 pound 95% lean ground beef
2 eggs, lightly beaten
1 onion, diced
4 garlic cloves, minced
1/3 cup breadcrumbs
1/4 cup reduced-fat shredded cheddar cheese
2 tablespoons grated Parmesan cheese
2 tablespoons fresh parsley, snipped
1 tablespoon Worcestershire sauce
1 tablespoon light mayonnaise
1 tablespoon ketchup
1 teaspoon dried basil
1 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
8 light hot dog buns
Optional: toppings you enjoy on cheeseburgers (i.e. ketchup, mustard, mayonnaise, barbecue sauce, etc.)
Here is what you do:
Preheat the oven to 400°F. Lightly spray a 9×13 inch baking sheet with cooking spray.
In a small sauté pan, cook the bacon until crispy, transfer to a paper towel-lined plate and pat off grease with the paper towel. Once bacon is cooled, crumble the bacon.
In a large bowl, combine bacon with the remaining ingredients, except for the buns.
Shape meat mixture into 24 balls that are about 3 tablespoons each, or approximately 1-1/2 to 2 inches in diameter.
Place meatballs on the cooking sheet and bake for 25-30 minutes.
Place three meatballs on each bun and top with favorite cheeseburger toppings (ketchup, mustard, mayonnaise, barbecue sauce, etc.)
Makes 8 Bacon Cheeseburger Meatball Subs.
