Tuna Zucchini Cakes

These are tasty tasty!! I am so happy to share this spin off on salmon patties with you. They’re tuna patties that are bulked up with shredded zucchini so we are calling them . . .

Tuna Zucchini Cakes!

If you love salmon patties you will love these tuna zucchini cakes. 🙂

Cuisinart Slicer, Shredder, Spiralizer

This thing does it all, and it super easy to use and clean.  By using 4 different cutting cones and 2 different feeding tubes (provided with the shredder, slicer, spiralizer) you are able to slice, ribbon, crinkle cut, thin shred, wide shred, and make spaghetti sized noodles out of vegetables!

This machine does it all.

Let me just tell you… you will LOVE the simplicity of this “machine”. It’s electric, so all you have to do is put the vegetables in and push down on the feeding tube down as it does all the work for you. It was great because it made something like shredding zucchini and chopping onions a lot of fun, and completely safe, so that my eight year old was eager to help.

 

Okay, so let me show you what we were able to do with the vegetables in this recipe using our Cuisinart shredder cone and the angled feeding tube. (The maroon cone, if you are using the same product as me)

We chopped up onion in seconds…

And we shredded zucchini in seconds too!

Isn’t that pretty? There is something strangely satisfying about seeing vegetables cut perfectly, don’t you think?

Alright, let’s get to this great recipe!

Here is what you need:

1 tablespoon butter
1 cup finely chopped onion
2 (6.5 ounce) cans OR 1 (12 ounce) can light water-packed tuna, drained and flaked
3/4 cup Italian seasoned breadcrumbs, divided
2 cup shredded zucchini
2 eggs, lightly beaten
2 egg whites, lightly beaten
1/3 cup minced fresh parsley
2 teaspoon lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil

Here is what you do:

In a large saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Remove from heat.

Cook onion in a little bit of butter

 

While the onion is cooking shred the zucchini. (If you haven’t already)

Combine onion with tuna, 1/2 cup breadcrumbs, zucchini, eggs, egg whites, parsley, lemon juice, salt, and pepper. Mix well. Using hands shape into 10 patties ( about 1/4 cup of the mixture for each).

Coat with remaining breadcrumbs.

In a large skillet, heat oil over medium heat. Add patties; cook 3 minutes on each side or until golden brown and heated through.

Makes 5 servings.
One serving is 2 patties.
2 patties are 5 Green, 4 Blue, and 3 Purple Points.

Ingredients
  • 1 T. butter

  • 1 T. canola oil
Instructions
  1. In a large saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Remove from heat.
  2. Combine onion with tuna, 1/2 c. breadcrumbs, zucchini, eggs, parsley, lemon juice, salt, and pepper. Mix well. Using hands shape into 10 patties (1/4 cup of the mixture for each). Coat with remaining breadcrumbs.

    This was really good! It’s another one my picky two year old ate without too much of an argument. I love these with the extra veggies in them. I didn’t have regular eggs so I just used egg whites and it still turned out great and ended up being only 5 points a serving. Yay!

      418 mg. Sorry. I use myfitnesspal.com to find the nutrition facts for our recipes and for some reason it makes me adjust the “salt” to say “table salt” in order to get the right sodium count. This was something I did not realize when I first started using their nutrition fact tool. I have made the correction on this recipe now. Thanks!
