Mmmm…. Yumm!
Okay, so these stromboli’s aren’t super low in smart points but they taste great, are filling and they are packed with protein, iron, and vitamin A so I still recommend trying them.
These stromboli’s are fun for kids to eat and to help make. Kids will love helping stuff a pizza crust wrap with some turkey, spinach, sauce, and cheese and parents will love that they are quick and easy to make.
Here is what you need:
1 lb. 97% (or more) lean ground turkey
1 package (11 oz.) Pillsbury thin crust refrigerated pizza crust
3/4 c. reduced fat pasta sauce, divided (something like Prego Light Smart Spaghetti sauce)
1 package (10 oz.) frozen chopped spinach, thawed and well drained
6 Tbsp. shredded Colby and Monterey Jack cheese blend
2 t. low-fat (or fat-free) milk
2 t. grated Parmesan cheese
Here is what you do:
Heat oven to 400°F.
Cook ground turkey in a saucepan until cooked through and no longer pink. Once cooked, turn off heat and allow to cool.
Unroll crust and cut into 6 equal rectangles. Spoon 1 tablespoons of the sauce on one half of each rectangle.
Layer 3 tablespoons spinach, 1/4 cup ground turkey, and 1 tablespoon cheese over the sauce.
Fold strips over filling. (mine were all kinds of messy, but whatever, they still tasted great!)
Brush with milk and sprinkle with Parmesan. Bake for 12 minutes.
Serve with remaining sauce.
Makes 6 strombolis.
Each Stromboli is 7 Green, 6 Blue, and 6 Purple Points.

Yum! Next time I’m going to add sautéed mushrooms and onions and more seasonings to the turkey to give them more flavor. I also noticed you used thin pizza crust which I wish I had purchased. I just grabbed the regular one. It took longer to cook and was a lot of bread, but we still chowed down!

Mmmm.. Yes, sauteed mushrooms and onions would be great with this!! I think I really stretched out the dough too so that probably made it thinner. I didn’t really think about that. Sorry. Glad you guys still liked it though. 🙂 Thanks for your comment.
