Tortellini in Garlic Broth with White Beans and Greens

This tortellini soup is cooked in a garlicky chicken or vegetable broth with white beans and spinach. This is a satisfying soup that tastes delicious! I would definitely recommend this recipe. It comes from the “Weight Watchers Cook It Quick” cookbook. I am a fan of many of the recipes out of this cookbook. They claim that the recipes are “Speedy recipes with low points value in 30 minutes or less” and I have found that to be true for the most part.

Here is what you need:

3 cups fresh or frozen cheese tortellini
3½ cups vegetable or chicken broth
4 garlic cloves, minced
1 tsp. dried sage or rosemary leaves, crumbled
2 cups coarsely chopped cleaned spinach or other greens
1 (16 oz) can small white or navy beans, rinsed and drained
4 sun-dried tomatoes, minced
¼ cup grated Parmesan cheese

Here is what you do:

1. Cook the tortellini according to the package directions, until just tender (do not overcook).

2. Meanwhile, in a large saucepan, bring the broth, garlic, sage and 1 cup water to a boil. Stir in the spinach, beans, and tomatoes. Reduce the heat and simmer until the spinach and tomatoes are tender, about 5 minutes. Stir in the tortellini; simmer 1 minute longer. Sprinkle with the cheese and serve.

1/4 of this recipe is worth WW 7 P+ 12 Smart Points 8 WW FreeStyle Smart Points. The cookbook says that this makes 4 servings, but it does not specify how much one serving is.

Update:

:/ Bummer. This recipe went up in points per serving. It tastes delicious, though, so save it for a week when you have a few extra points!

    Alisha,
    I am searching for PP recipes and when I go to the archives many of them do not come up. Am I doing something wrong? I lost all of my weight on the Points+ program so that is what I use. I know I can figure points but was just wondering about the archives. I have been a followet of yours for several years and enjoy your recipes.

      Hi Linda, there are a couple of ways you can get to recipes that have Points+ listed.
      1. You can go to the meal plans that included them and were not changed here: https://mealplanningmommies.com/category/weight-watcher-friendly-meal-plans-with-points/
      2. You can go to the newer recipes and refer to them”Green Points” which are basically the Points Plus plan but with a new name. You can get to those here: https://mealplanningmommies.com/category/myww-friendly/
