Spinach and Feta Frittata (GF/SF)

I have really been into eggs this year. Breakfast, lunch, dinner and snacks!

This is an easy recipe you can make for breakfast, lunch or dinner. It’s easy enough to adapt for the pickiest of eaters and a crowd pleaser when you need to take a dish to a brunch.

If you have never made a frittata, don’t let the fancy name scare you off. It is basically quiche without the crust which makes it a perfect meal for those of you who are Gluten/Grain free. It is still a satisfying dish without the crust so even if you aren’t gluten free you will still fall in love!

Spinach and Feta Frittata (GF/SF)

Cook time: 25 mins
Total time: 35 mins
Serves: 8
Satisfying egg dish that is as unique as you make it!
Ingredients
  • 9 eggs
  • 2 handfuls of chopped, fresh spinach
  • 6 oz feta
  • salt and pepper to taste
  • *note- you can change the spinach and feta to whatever your heart desires. Endless combinations- sausage, bacon, onion, mushroom or just plain cheese!
Instructions
  1. Preheat oven to 350 degrees
  2. Grease a 9 inch pie pan or 8×8 square pan
  3. Scramble 9 eggs in a bowl
  4. Pour in toppings- 2 handfuls of chopped spinach and 6 oz feta cheese
  5. Mix
  6. Add salt and pepper
  7. Pour into pie pan
  8. Bake for 20-25 minutes or until eggs are set
