This Steak and Vegetable Stir Fry dinner was a winner. The whole Hughes clan approved of this one. If you have never had broccoli coleslaw before, you will definitely want to give this recipe a try. Sneak some extra vegetables into your diet in a fun way with this stir fry recipe.
What kind of broccoli coleslaw should you use?
The broccoli coleslaw I used was Mann’s Broccoli Cole Slaw, which is a shredded vegetable mix of broccoli, carrots, and red cabbage. It doesn’t sound like much, but I am telling you, with the right sauce, it can taste fantastic, and our kids loved it. Tossing it in with a little garlic, ginger, and soy sauce made this Steak and Shredded Vegetable stir fry absolutely delicious!
Honestly, I think I am going to have to come up with more ways to use broccoli coleslaw now that I have seen my kids’ reactions to it! Thank you, Manns!

Sometimes my kids surprise me. This was one of those times. There is no hiding the veggies in this stir fry, so I wasn’t sure what my kids’ reactions would be when they saw that most of the stir fry was, in fact, vegetables. But apparently, when you shred the vegetables so that the broccoli stops looking like broccoli and more like veggie confetti, my kids are eager to dig in.
My youngest (9 years old) announced a couple of bites in that he thought the “chicken” tasted good. (steak)
My other two kiddos loved it all and were asking for seconds.
There is just something about vegetables being shredded that makes them fun to eat, for young and old alike. My kids had NO idea they were eating broccoli and carrots, actually, but they were curious about the “purple stuff” (red cabbage).
When we explained what was in the dinner they’d eaten, they were pleasantly surprised. My middle-school aged son let me know the next day that he likes meat with vegetables now! (Only took us 12 years to get here!) 🙂
A healthy dinner that tastes great for just 3 WW SP per serving.
I considered adding rice or chow mein noodles to this recipe, but I decided to make it without them first, just to see if they would be necessary. After taking a couple of bites, I knew I could leave the carbs out, so I did. If you are trying to bulk up the meal, or if you are feeding a larger crowd, using rice or chow mein noodles would be a quick and inexpensive way to do it. Alternatively, you could toss in an extra bag of broccoli coleslaw.
Are you ready to try this yumminess?
Here is what you need:
2 teaspoons olive oil, divided
1/2 tablespoon ginger root, minced
1/2 tablespoon garlic, minced
2 eggs
12 ounces broccoli coleslaw mix
1 pound lean flank steak, cubed
3 tablespoons soy sauce
2 green onions, sliced
Here is what you do:
Heat 1 teaspoon olive oil in a large stir fry skillet set over medium-high heat.
Add ginger root and garlic. Allow to cook 30 seconds.
Add eggs to the pan. Scramble the eggs as they cook, about 1-2 minutes.
Toss in the broccoli slaw mix. Cook about 5-6 minutes, or until crisp-tenders. Transfer eggs and broccoli slaw mix to another bowl.
Heat remaining 1 teaspoon oil in the same pan you used for the eggs and slaw mix.
Add steak to the pan and cook 5-6 minutes or until fully cooked, tossing occasionally as it cooks.
Once steak is fully cooked, add the egg/Cole slaw mix back into the pan with the steak. Mix in the soy sauce with the other ingredients and allow to cook 1-2 minutes, or until flavors are mixed.
Top with green onion.
Makes 5 servings.
One serving is 1 cup.

I just made a chicken satee recipe last week that used broccoli slaw. It was so good! It was my first time using broccoli slaw also. I was really impressed how it could easily sub for noodles in an Asian dish. Even my kids liked it! I can’t wait to try your recipe now! Adding it to the meal plan for next week!

Hi Marlene, Sorry. I know 5 servings is not as easy to divide. This recipe reheats really well, so you could eat the leftovers for lunch the next day. Alternatively, you could half the recipe and one of you could eat 1-1/2 cups instead of 1. Not sure if this helps or not, but I definitely think you will like this recipe enough to eat it two days in a row so I think if it was me I would just cook it as it is.
