Just recently, Gina Homolka came out with #1 New York Times best selling cookbook, called One and Done. In her cookbook she incorporates her healthy, flavorful, family tested recipes that only require one vessel, whether it be a sheet pan, Instant Pot, Slow Cooker, Air Fryer, Skillet or Dutch Oven.
Less mess=More fun!
Cooking in a single vessel means dinners and be streamlined and you can enjoy having less to clean up! And who doesn’t love that, because let’s face it… cooking and eating is fun, but doing the dishes afterward is not! But, even if you don’t own all of the appliances in the cookbook, it’s still okay. Gina gives alternative cooking directions using everyday cooking equipment where possible, so you won’t miss out.
Nuggets Three Ways.
I just recently got a new air fryer oven and I have been looking for reasons to use it. As I thumbed through the One and Done cookbook I noticed that there were a couple of pages devoted to three different ways to make nuggets: Breaded Cauliflower Nuggets, Buffalo Chicken Nuggets, and Classic Chicken Nuggets.
My kids love nuggets, so I thought it would be a great place to start. Plus, I already had all of the ingredients I needed to make them, so I knew it was meant to be! 🙂
The very first foods I made in my new air fryer oven were Skinny Taste cauliflower nuggets and classic chicken nuggets. They turned out great and they were so easy to make! By the time I was done making them I was totally crushing on my new air fryer oven and my new SkinnyTaste cookbook!

Don’t you just want to gobble them right up? I was able to make both of them in my air fryer, one right after the other. Because they looked so similar, we played a game where I would give one to the kids and they would guess if it was going to be cauliflower or chicken, and then taste it to see if they were right. It was a fun, laid back kind of dinner and we all enjoyed it.
So, how do I know the nutrition facts and WW Smart Points are per serving?
The nutritional information is provided with every recipe in the cookbook. Because Gina gives the WW FreeStyle SP for her recipes on her blog, she knows that some her readers will still want to know the Smart Points as well. To better accommodate WW members, she has created a cookbook index on her website where you can plug in the recipe you are making and it will give you the SP per serving for that recipe.
When I go to the cookbook index page I can see that the Classic Chicken Nuggets I made are just 2 WW SP one serving (about 8 nuggets) and the Breaded Cauliflower Nuggets are just 1 WW SP for one serving (about 7 pieces)!

Of course, once you own your own copy of the cookbook, you can do what you want with it, so you could even go in and write the WW SP next to each recipe so you don’t have to look it up each time you make the recipe.
Bold and colorful pictures!
Honestly, if I pick up a cookbook and there are no pictures in it, I put it right back on the shelf. I don’t even mess with cookbooks that don’t include pictures.
I always want to know what my food is going to look like before I start making it. Don’t you?
