Simple Grilled Bruschetta Chicken

This delicious Grilled Bruschetta Chicken is super to make and is just 4 green, 2 blue, and 2 purple points.

Seasoned and grilled chicken is topped with melted cheese and a tomato/basil mixture that tastes like bruschetta, only yummier! So good, and it’s just 2 WW FreeStyle Smart Points per serving!

Keepin’ it fresh.

BASIL. Fresh basil. Perfect for Grilled Bruschetta Chicken!

If you have never had bruschetta before, you may be tempted to use dried basil seasoning, but when it comes to bruschetta, don’t. Although I used a couple of other ingredients to enhance the flavors, the three key ingredients to any good bruschetta recipe are tomatoes, basil and garlic, and only fresh basil will do.

Here is what you need:

Ingredients for delicious Grilled Brushetta Chicken is so delicious and is just 2 WW FreeStyle SmartPoints per serving!

CHICKEN:

4 (4 ounce each) boneless, skinless chicken breasts
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking spray
4 slices thin-sliced provolone cheese

FRESH TOMATO/BASIL TOPPING:

3 small tomatoes, seeded and chopped
2-3 garlic cloves, minced
3 tablespoons fresh basil, chopped
1 tablespoon red wine vinegar
1 teaspoon brown sugar
1/4 teaspoon salt

Here is what you do:

Sprinkle both sides of the chicken breasts with the Italian seasoning, garlic powder, salt, and pepper. Grill chicken on a grill or grill pan sprayed with cooking spray for 5-7 minutes on each side, or until fully cooked and juices are clear. Top each chicken breast with one slice of provolone cheese and allow cheese to melt.

Grill the chicken on an indoor smokeless grill for great taste with grill marks! Giveaway coming up!

Meanwhile, in a medium bowl, combine the fresh tomato/basil ingredients.

    Hello. I am so glad to have found this website and the meals look delicious however when I calculate the meals based on your nutrition information the points are much higher than you have listed for freestyle. Am I missing something?

      Hi Penny, there is a calculator on the WW app that allows you to plug in the nutrition facts to get the number of Smart Points an individual food is worth. There are over 200 zero points foods now so WW has created a recipe builder that takes in account zero point foods in a recipe. When using the recipe builder, you enter in each ingredient and the number of servings the recipe makes. Then, the recipe builder calculates the number of Smart Points per serving, factoring in zero point foods. If you are tracking off of nutrition facts, rather than the recipe builder, your Smart Points total will be different than mine. It does take a little bit more time, but I use the recipe builder on here for our recipes to be consistent with what WW suggests doing. Thanks for asking.
