Pot Roast Horseshoe

There are so many ways to use leftover roast beef: Roast beef sandwiches, pulled BBQ roast beef, vegetable beef soup…. We decided to do something different and make horseshoes this time!

There are so many variations to this and you can really do whatever you want. I made a homemade cheese sauce to go on top, but you could simply use shredded cheese or melt some Velveeta.  We put this on top of french fries, but you could do toast, mashed potatoes or baked potato.

This was something my kiddos loved along with my husband.

I combined a few different cheese sauce recipes I found, but the main idea came from a blog called seriouseats.com

For some amazin’ homemade horseshoes here is what you need:

  • Precooked beef roast (I normally use leftover beef from a previous meal)
  • French Fries
  • Cheese Sauce (if you want to make your own: 8 oz sharp cheddar cheese, 1 TB cornstarch, 1 cup evaporated milk, 1/2 tsp hot sauce, 1/4 tsp salt)

1st step: Place your french fries in the oven (cook according to package)

2nd step: While the french fries are cooking we are going to make the Cheese Sauce! Start by tossing 8 oz extra sharp cheddar in a bowl with the 1 TB cornstarch.

3rd step:  Transfer cheese to a saucepan, add 1 cup evaporated milk, 1/2 tsp hot sauce and 1/4 tsp salt.

4th step: Cook over low heat, stirring constantly with whisk until it is bubbly and thick

5th step: By now your fries should be about done. Shred your already cooked beef, put in a pan with a few TB of water and reheat.

6th step: If you want to think your cheese sauce you can add more milk and if you would like it spicier, simply add more hot sauce to your liking!

7th step: Put it all together!  Place fries on a plate, then your beef and then the yummy cheese sauce.

This is a sure fire way to use roast beef leftovers that is different than most roast beef dinners!
Ingredients
  • French Fries
  • Precooked Roast Beef (can use leftovers)
  • 8 oz extra sharp cheddar cheese
  • 1 TB cornstarch
  • 1 cup evaporated milk
  • 1/2 tsp hot sauce
  • 1/4 tsp salt
Instructions
  1. Heat up french fries according to package directions
  2. Make Cheese Sauce by first tossing cheese and cornstarch in a small bowl
  3. Transfer to a medium saucepan and add 1 cup milk, hot sauce and salt.
  4. Cook over low heat stirring constantly with whisk until bubbly and thick
  5. Thin with more milk or add more hot sauce as needed
  6. Put leftover pot roast in a pan with a little water, cover and reheat on a low temp
  7. Pile cooked french fries, roast and then cheese sauce on your plate and serve!
  8. Enjoy!
