This is one of my favorite meals ever, hands down. Best part? There isn’t a whole lot to it! You can make it as simple or as complicated as you have time for!
Rice Bowls can be tailored to who is eating as well since they are served “buffet style” those eating with you can add only what they like. As you will see below, my husband and I had different versions of a “rice bowl.”
One of my favorite things about Rice Bowls is the fresh pico and guacamole. These can be time consuming to make, so if you do not have time just buy some fresh salsa and guac at the store and call it a day.

Buffet of Toppings for the Rice Bowls: Guac, Pico, Tortilla chips, sour cream, shredded white american cheese, fresh cilantro, rice and beef taco meat.

I crave these weekly. So easy to make and amazing. Can you tell Mexican Food is my weakness?!
- Beef Taco Meat
- 3 cups White or Brown Rice
- Toppings:
- Sour Cream
- White American Cheese
- Pico
- Guacamole
- Sour Cream
- Cilantro
- Tortilla Chips
- Cook rice following instructions on package.
- Brown beef, drain and season with taco seasoning
- Prepare Toppings
- Place Rice in Bowl
- Top with your favorite toppings
- 3 large or 6 small tomatoes
- 1/4 cup diced red onion
- 1/2 bunch of cilantro chopped
- 1 garlic clove
- salt and pepper to taste
- Dice tomatoes
- Add red onion, cilantro and garlic.
- Mix.
- Add salt and pepper to taste
- Enjoy!
- 2 avocado
- 3 scoops pico
- 1 TB lime juice
- 1 tsp salt
- Dice avocado
- Put in 3 large scoops of pico
- Add 1 TB lime juice
- Add 1 tsp salt
- Mix and Mush with a fork.
- Taste test and enjoy!
- *This will last up to 2 days in the fridge, covered.

Someone asked for the Smart Point Values on these foods, so I figured out some numbers. I thought since I was calculating I might as well share it on here as well. Here ya go:
WEIGHT WATCHER SMART POINT VALUES FOR RICE BOWL MIX-INS…
Ground beef (95% lean or more) with taco seasoning – 3 WW SP for 3 oz. (roughly 1 SP for 1 oz.)
White or Brown Rice Cooked–3 WW SP for 1/2 cup
Reduced-Fat sour cream-2 WW SP for 2 Tbsp. or Fat-Free sour cream–1 WW SP for 2 Tbsp.
Dietz & Watson White American Cheese– 2 WW SP for 1/2 oz.
Pico– 0 WW SP (load up on the pico)
Guacamole- Varies by size of avocado (1/4 of an avocado is 3 WW SP so I would say roughly 1-2 WW SP for 2 Tbsp)
Cilantro– 0 WW SP
Baked Low-Fat Tortilla chips–3 WW SP for 12 chips or Regular Tortilla chips–4 WW SP for 12 chips
WEIGHT WATCHER FRIENDLY BUILD YOUR BOWL IDEA:
12 Baked Low-Fat tortilla chips (3 WW SP)
1/2 cup white rice cooked (3 WW SP)
3 oz. ground beef (3 WW SP)
Sprinkle on just 1/4 oz. white American cheese (1 WW SP)
Pico, as much as you want (0 WW SP)
