Mexican Inspired Foods you will LOVE!

If you are someone who loves Mexican food this post is for you! This is a compilation of our top ten favorite Mexican inspired recipes on Meal Planning Mommies.

I realized yesterday that I have several different variations of quesadilla recipes in my recipe binder. Any time I see a quesadilla recipe in a cookbook it is one of the first recipes I usually try. I also have quesadilla recipes that were torn out of magazines along the way. I love avocado, salsa, tortilla chips, enchiladas, queso dip, guacamole, tacos, chimichangas and tostadas. I love it all! But who doesn’t, right?

Here are ten of the Mexican inspired recipes on MPM that we think you should try…

1. Copy Cat Taco Bell Mexican Pizza.

I made these pizzas for my family during the “Restaurant Copy Cat” recipes week. I love me a good Mexican Pizza!

2. Mexican Chicken Soup

This soup gives you a healthier way to satisfy that Mexican food craving. My whole family loves it when we eat this soup! You can also add shredded cheddar cheese, crushed up tortilla chips, and sour cream to this soup.

3. Fried Chimichangas and fresh pico de galo

This recipe is so delicious. Sarah made these a long time ago before she knew she had a gluten allergy. The nice thing about these chimichangas is that you can make a big batch, freeze them after they cool, and pull out one or two for a lunch or for dinner later. (the picture does not do this one justice)

4. Slow Cooker 3 Ingredient Mexican Chicken (to go in enchiladas, fajitas, etc.) and DIY taco salad bowl

If you are looking for a simple way to make a lot of Mexican shredded chicken as efficiently as possible, this is it. Once the chicken is cooked you can serve it in your own DIY taco salad bowl or use the chicken for enchiladas, fajitas, chimichangas, or soft shell tacos!

5. Chicken Enchiladas

I love this recipe! Everybody does. These enchiladas are delicious!

6. Creamy Beef Enchiladas

If you are looking for a great beef enchilada recipe look no further! These also freeze well!

7. Chicken Quesadillas

We have two really great chicken quesadilla recipes on here that I love. One with avocado tomato salsa and the other with corn salsa. Both are great so I am sharing both.

8. Black bean and Mango Tostadas

This one is especially great this time of year when mangoes and avocados are in season. I can’t even tell you how great these taste. You will just have to try them for yourself.

9. Pork and Pineapple Tacos

If you liked the black bean and mango tostadas you will probably like these as well. Something about the sweetness mixed with the saltiness makes these taste delicious!

10. Cuban Tacos

Sarah posted this gluten free taco recipe not too long ago. These are a big hit in her house. The meat can be cooked ahead of time and these can be tossed into a slow cooker meal for an easy meal idea!
