Keeping it simple: Seasoned Grilled Chicken with veggies

With summer break almost here the grills are starting to come back out. There is just something special about the smell of cooking on an outdoor grill. Don’t you hate it when you smell your neighbors grilling out? That’s the worst.

This is not a recipe. It’s a simple summer dinner idea.  A long while back (not even sure when) I mentioned that when I go shopping I follow a grocery list that goes with my meal plan, and then I snag extra things (not on the list) along the way that I think could make a meal really fast and really easy dinner. These ingredients are last minute snag ideas.

Healthy. Fast. Low in smart points. Here is my simple dinner idea:

Green Giant Fire Roasted corn blend, peppers and onions.
2/3 cup is 3 Weight Watcher smart points.
                                     +
Grilled chicken with seasoning (I used Pampered Chef Southwestern seasoning and salt, but you can try out all different kinds of seasonings)
4 ounces is 3 Weight Watcher Smart Points

Full meal: 6 Weight Watcher smart points.

I just got our my grill pan and cooked the corn blend in the grill pan sprayed with cooking spray. I added a little salt.

Then I took the corn off of the pan and cooked the chicken on the grill pan. IMG_5515
Seasoned Grilled Chicken with veggies
Serves: 4 servings
Ingredients
  • 1 (12 oz.) bag Green Giant Fire Roasted corn blend, peppers and onions
  • 1 lb. skinless, boneless chicken breasts
  • 1-2 tsp. Southwestern seasoning
  • Salt and Pepper to taste
Instructions
  1. Cook the corn blend on a grill pan sprayed with cooking spray. Season with salt if desired.
  2. Move the corn to a bowl.
  3. Cook the chicken on the grill pan 5 minutes. Flip the chicken and cook 7 minutes or until the chicken is cooked all the way through and there is no pink in the middle.
  4. One serving is 4 ounces chicken breast and 2/3 cup of the corn mixture.

It doesn’t get any easier than that!
To keep this dinner at 6 smart points I used 1 pound of skinless, boneless chicken breast and one (12 oz) bag of the corn veggie mixture and divided it into 4 servings.
One serving is 4 oz. of chicken and 2/3 cup of the veggies for 6 smart points.
