These muffins are fabulous! Not only are they pretty healthy for you, they are so yummy. They are so yummy, in fact that my girls call them “cupcakes!” They are great for breakfast, snacks, dessert and they even freeze great! It would be a great idea to make a double batch and freeze the rest in a Ziploc. Then you take out how many you need from the freezer, warm it up in the microwave and wha-la!
