This pork chop recipe is great if you are looking for something quick to pull together. You will need to plan ahead enough to marinate the meat in the fridge for up to 4 hours, but if you remember to do that then this recipe is as easy as they come. Chances are good you will already have the marinade ingredients on hand, so this is especially great if you are on a tight budget! One pork chop is just 4 WW Points+ so you can pair this up with some veggies for a great dinner that you can eat guilt-free. This pork chop recipe comes from the Weight Watcher New Complete Cookbook.
Here is what you need:
1/4 cup Dijon mustard
4 tsp. honey
1 tsp. cider or white wine vinegar
1/4 tsp. black pepper
4 (5 oz.) bone-in loin pork chops, about 1 inch thick
Here is what you do:
To make the marinade, stir together all ingredients except pork in cup
Transfer marinade to large zip-close plastic bag; add pork. Squeeze out air and seal bag; turn to coat meat. Refrigerate, turning bag occasionally, at least 4 hours or up to overnight.
Spray broiler rack with nonstick spray. Preheat broiler.
Remove chops from bag; discard marinade. Place chops on prepared broiler rack and broil 5 inches from heat until cooked through, about 6 minutes per side. (I ended up just grilling mine in a grill pan)
