Corn, Avocado, and Tomato Salad

Here’s a fun little recipe that a mom brought to my Mom to Mom meeting a couple of weeks ago. It is simple to make, healthy, and it was a big hit at our meeting. Hope you all enjoy it as well!!


Salad Ingredients:

2 cups cooked corn, fresh or frozen
1 avocado, cut into 1/2 -inch cubes
1 pint cherry tomatoes, halved
1/2 cup finely diced red onion

Dressing Ingredients:
2 Tbs. olive oil
1/2 tsp. grated lime zest
1 Tbs. fresh lime juice
1/4 chopped cilantro
1/4 tsp. salt
1/4 tsp. pepper

Directions:
Combine the corn, avocado, tomatoes, and onion in a large glass bowl. Mix together the dressing ingredients in another bowl and pour over the salad. Gently toss ingredients together.

This salad goes great with tortilla chips!! 🙂

    Looks delicious, I’m going to try this! How many points would this be? Would the points just come from the Olive Oil?

      The points would be from the oil and the avocado. 😊 This recipe was posted before I started calculating points. I’m not sure how many servings this recipe made now so I am not sure how many points one serving is. I’m sorry. I will have to try to make this recipe again soon and add pics/points.
